    Made the chicken biryani for dinner tonight and it was such a big hit. Loved the ease and the flavours. Never have I used star anise in my biryani and it was delicious.

    I made the vegetable version tonight..added yellow squash because it needed to be used..the seasonings were perfect, the balanced flavors so enjoyable..My first Biryani, definitely not the last..
    I am 82, caregiver to the sweetest husband in the world..who won't eat vegetables..he ate every bit.

    These both look delicious! I looked up many recipes and they all call for removing the browned onions to return to the dish in layers when the rice is added. I thought having onion right on top would make the onion flavor more pronounced but it didn’t. I think your way, leaving them in with the chicken or veg to braise, probably produces the flavor I’m looking for. I might still make more as crispy onions to garnish though lol.

    Made the chicken version and it was super delicious. Perfect for a very rainy Toronto day..such comfort food. The spices made this dish perfect for our family. Will definitely make it again.

    looks incredible. I've made your butter chicken biryani recipe several times--always a favorite. I have a question about this recipe, especially the Veg version. I have some vegan friends I'd like to make this for--HOW essential is the yogurt? Should I find a vegan substitute or leave it out all together?

      I'd suggest fennel seeds as they have an anise flavour.

      There are lots of lovely spices in it so you can just skip the star anise

    Do what the Iranians do. Boil your rice for less time and then mix it with your wet stuff and let it brew on low heat. Your rice will taste and smell more amazing, guaranteed.

    How would the veg proportion change if you wanted to add paneer or cauliflower?

      I would reduce the potatoes to 1 and then add a few florets of cauliflower and a few cubes of paneer to it

    If you want to make it even easier and quicker I use a couple of microwave rice on top of the chicken or lamb mixture if I do not want to make the biriyani in the traditional way. The beauty with this is if you keep a few packs of microwave rice in the cupboard you can make a biriyani in very quick time.

    I note you using what looks to be the same utensil in both the chicken and veggie pans? can't tell if you washed your hands after touching the meat before the veg... being a veggie since the 70's I have noted non-veggies who don't understand our viewpoint about such things.
