    Harvard Beets are one of my favourite feel-good recipes...My Nanna and I used to make them because we were the only ones in the family that liked them. The only thing we did differently than your recipe, is that we saved the cooking water to use in the sauce instead of using fresh water. And at the end, we added the juice from half a lemon. We tried it once without butter, because we didn't have any, we were surprised because they came out better without the butter. Thank you for posting this, more people need to eat beets, they're amazing!!

    I grew up with a grandma that always made these and they were my favorite veggie. How would you prepare these for canning?

      If its for Harvard beets that you want to can .. same thing except leave out the Cornstarch. you would place hot beets in sterile jars pour hot syrup over and place new lids on jars.. place in canner of hot boiling water for maybe 15 min. tighten lids they should seal nicely... but heat up and thicken with the cornstarch and water when you go to use it for a meal ..(its not pickled beets .)
      could add lump of butter than as well .

    Not sure, but I think my wonderful aunt, many, many years ago, made this for us when we were kids! My wife and really don't do sugar anymore, but I have a feeling any kind of "sub" will not give the results....maybe coconut sugar? Or just go half on the sugar. (Diabetes runs in the family big-time.) Coconut sugar has a super low glycemic index. Any suggestions please? Thank you for your wonderful channel!

      Yes Charles Manning, you are so right. It is hard to find that substitute for sugar. Maybe half sugar is best and in turn it'll be less sweet of course but definitely a healthier option than full sugar. I would have to try different substitutes to see which one works with beets before recommending it but I am curious if coconut sugar would work.

    I miss having Harvard beets My grandma used to make those years ago before she passed away in the mid 90s. Have graved them many in the years since, but even the canned ones that used to be in the grocery store are no longer available.
    Is it possible to make these with canned organic beets? Frozen beets?

      I think fresh is better but could likely do it from canned or frozen. Why not?

    Loove beets. Didnt know there was any recipes other than beets, pickled beets with onions and just more beets. Didnt know you had to peel them. How ignorant am I?

      Most of the nutrition is just under the skins. But if they are not organically grown, then the insect poison is also just under the skins.

    Yeah, had a latin neighbor cook me some tamales for helping them do some woodworking. Took me about 15 minutes to decide you weren't supposed to eat the corn husk. My teeth just refused to live up to the task. They did another batch for me wrapped in banana leaves. Found out banana leaves are a pretty decent laxative. I love to cook but Im trying to forego my friends having to buy dental insurance or stock in toilet paper. I'll keep trying. I just figured out you cant boil stale bread to make it tender again. One step at a time I guess.

    This is the recipe whereafter I sought. Goin to use maple syrup instead of sugar and water, and arrowroot instead of corn's starch.
