Hi, I made your raw chocolate brownies. I had to substitute coconut flour for almond flour and for the liquid sweetener I used a product called Sweet freedom chocolate shot. I cant tell you how good they were; I havent 'baked' anything for years as I no longer have an oven, and I just loved the whole creative process. I've purchased a kilo of cacao powder, so I'm fully prepared to make several more batches! Thanks so much for the amazing recipe!

Use the leftovers from juicing carrots instead of shredding. Saves you time with shredding, you get two uses out of the carrots, and it tastes just as good! Also, I think adding a bit of orange zest and a dash of orange juice instead of the lemon is truly yummy.

The first time I ever had a carrot cake was for my 22nd birthday and a friend had bought one from a local bakery! It was to die for and I've had a few of them since then, but that was tops...perfect and light, not too heavy!! Will try this, sounds yummy and so nutritious. Thanks for sharing~

I made thsi today and it was surprisingly fantastic!! Ive tried raw recipes before but thought they were either lacking in flavour or texture and soemtiems had very overwhelming flavours. But this was a great recipe. I actually made a third of the recipe and made it into bars and topped them with a kind of frosting I made just from cashews, plant milk, and some honey. I was so happy that my family also liked it and can enjoy it with me. I used normal coconut oil (not deodorised) and it wasn't overwhelming at all. You can taste the coconut shreds basically. It also doesn't taste like dates!! I was worried about that cuz I wanted it to taste more like a carrot cake. Good ratio of ingredients. The only difference I made was I added cardamom! Highly recommend

Carrot cake is awesome. I like it with cream cheese icing, but this vegan recipe is great too. I'm flexible. I have used a junior size jar of pureed carrots that are sold for babies, and now they have Happy Baby Happy Tot 4-oz. squeeze packs of all kinds of veggies and fruits. Some of them come with chia seeds. I bought several different varieties with my grocery order and used some in my homemade soup to thicken it and add flavor and nutritional value. You can add the fruit packs to oatmeal and you can add the veggie packs to mashed potatoes, just to be creative.

yesterday I discovered your channel by searching some healthy dessert recipes. Since then, I have watched almost all of your videos and I love them all. The recipes are easy, tasty and healthy. I am vegetarian but I´m in the process of switching into a vegan diet. The hardest part of it, is stopping eating desserts and sweets like cakes, cookies, brownies, ice cream, etc. But you are showing me that it is possible to eat vegan, healthy and delicious desserts and sweets and that makes me really happy. I've been thinking, you could shred the carrots in your food processor first, then separately combine other ingredients in the same bowl and add the previously shredded carrots. This way you don't need to wash your food processor, since you combine all of the ingredients anyways. Definitely gonna try this recipes, it seams delicious! xoxoxo

Dear Petra, I really love the baked version of carrot cake and one time I made it without sugar but it was dried you know...not fluffy and moist. When I saw your recipe I desiced to try to make it raw. To be honest me and my husband were relally surprised about the wonderful texture and taste it had!!! Your version of raw carrot cake is a very successful version in it is so delicious cake!!! Hello! I’m new to this channel and was looking for a cake I could make for my Grandma’s birthday. She has an allergy to gluten and is diabetic. My mom and I are also lactose-intolerant and on a raw vegan diet so this paleo/vegan/dairy free/sugar free cake sounded perfect for my family. I was apprehensive to try it because I really wanted to impress everyone with a cake that had the great taste of real carrot cake (we’ve all eaten carrot cake our entire lives, it’s one of our favourites) all while being healthy at the same time. I doubled the recipe and put it in a 9” cake pan and also added a little bit of coconut water to the carrot cake base to make it a bit less dry. We ate it today to celebrate my grandmas birthday and everyone loved it!!! They were surprised how amazing it turned out and couldn’t believe something so indulgent, rich and delicious could be healthy! I made this as Carrot* Cake* is my absolute favourite cake above all else. It tasted absolute divine the best healthy version i have made to date. Will stick to this delicious version. Can I use pecans though instead of the walnuts? or mix other nuts = 1 cup?
I’m from Brazil and it’s so interesting too see how different our carrot cake is form the North American version. Here the cake is bright yellow because we mix carrots, oil and flour and top it with chocolate frosting (the non vegan version, that is).

This cake looks yummy. I really like your clean clear and no nonsense video technique. Especially how you clearly show the ingredients as you add them into the mix, as that is how I like to learn new recipes. I also really appreciate that Tanner describes his true impressions of the dish. That is so helpful. However I do agree with the comments about the stark contrast of his subdued presentation to the rest of the video. May I suggest that Tanner could just smile to show that he is happy to be there and enjoying his part, without changing anything else in his valuable contribution. Can you help me to choose a lemon juice substitute? I cannot tolerate citrus but I imagine in a recipe like this that the lemon is a key flavour enhancer. I am thinking perhaps pineapple juice might work, and wondering if you have any suggestions please.

I made this as Carrot* Cake* is my absolute favourite cake above all else. It tasted absolute divine the best healthy version i have made to date. Will stick to this delicious version. Can I use pecans though instead of the walnuts? or mix other nuts = 1 cup?
Pecans would be good. That's what I'd do, as I'm allergic to walnuts.

I’m from Brazil and it’s so interesting too see how different our carrot cake is form the North American version.
Here the cake is bright yellow because we mix carrots, oil and flour and top it with chocolate frosting (the non vegan version, that is).

yes, I love carrot cake.. I bake it. Sheri-lynne was use to make carrot cake too often, always when I bring this cake to the church, many people love it.. so no wonder, that your cake it delicious too.. I would love to taste this icing too.. :-)
I was working in a restaurant the first time I encountered carrot cake - I said to a co-worker ' who would eat a cake made of carrots , that's carrying health-food too far ' - he said ' I don't know how healthy it is , but try it ' - I ate 500.00 worth of carrot-cake in one night ! and I'd eat your beautiful little carrot-cake like a pastry - IT LOOKS DELICIOUS !

This cake looks yummy. I really like your clean clear and no nonsense video technique. Especially how you clearly show the ingredients as you add them into the mix, as that is how I like to learn new recipes. I also really appreciate that Tanner describes his true impressions of the dish. That is so helpful. However I do agree with the comments about the stark contrast of his subdued presentation to the rest of the video. May I suggest that Tanner could just smile to show that he is happy to be there and enjoying his part, without changing anything else in his valuable contribution.
Can you help me to choose a lemon juice substitute? I cannot tolerate citrus but I imagine in a recipe like this that the lemon is a key flavour enhancer. I am thinking perhaps pineapple juice might work, and wondering if you have any suggestions please.
