If you were going to slice it yourself, I've seen prime ribeye suggested.
They also say to double, or even triple up on the meat, if you have more carnivorous tastes.
It's so thinly sliced, it'd cook in a flash anyway.
Alternatively, most Korean grocery stores have pre-sliced beef for hotpot.
Doubt they are prime ribeye, but it works.

What a fantastic dish! As an American I tend to gain weight during the cold months because our holidays involve eating lots of carb and sugar heavy foods. This dish looks so healthy but also so filling and warm, I will definitely try making it. I’m lucky to live close to an Asian market.

I made this tonight! It was a complete success! Unfortunately I don’t have an Instagram account so I cannot share the beauty, maybe I’ll make one later just for this lol!
The only substitution I had to make was bok choy for perilla leaf. My local Asian market had everything else I needed for affordable prices. I have never bought mirin before so it was a small quest to find it.
I went for a big nappa cabbage & bok choy because I’m currently living with 4 other adults. I doubled the recipe. They were very impressed with this dish and we ate everything except for a few small beech mushrooms. I used many shitake mushrooms in the bottom of my pot because I love the aroma they emit when they cook. The kelp and dried bonito flakes made a very flavorful broth. I have never had a broth so rich, and yet it tastes healthy and filled our bellies with so many tasty vegetables and lean beef. I don’t feel guilty after eating this meal because I know I filled up on a lot of healthy greens.
I also bought some udon noodles. I am going to use the leftover broth, meat, and veggies for a nice udon dinner tomorrow night! 😋

I love the nod to making the Dashi stock from scratch, but you can also use the instant dashi powder, if you have it, its almost identical in flavor but 1/3 of the effort.
Nice, I will eat that tomorrow. Use my usual chickensoup as stock though.

often hot pot (at least chinese hot pot) means gathering with several people. there are usually many different uncooked dishes (meat, veggies, noodles, etc.) and everyone dips the different ingredients into boiling stock. everyone eats as they cook the different foods. soup is different because it is typically consumed all at once, when a the ingredients are cooked. and also, soup is usually for the broth, not so much the ingredients while hotpot is the opposite.

I just bought a dashi powder (I'm lazy) that is made with bonito flakes and low sodium and no msg, and it was a really strong the smell, very smoked flavor to the smell. I had to pour half the liquid out to calm it down. I prefer the anchovy one of the same brand I got, but didn't see any. That one is super delicious. I guess I'm not a bonito flake type of person.
