Crispy pata is boiled for 2-3 hours with salt, pepper and soy. Then the entire knuckle is air dried for about 24 hours before it is deep fried. That makes the skin crispy but the meat tender.

I started watching tour videos 3 weeks ago and I tell ya what you made me realize that I love food, but can't eat what I like if I don't take care of myself. I got back on my dieting 2 weeks ago, staying consistent and using weight watchers for guidance and tracking. Soon gonna get back into the working out too. Yay! Another Mama Fina's food vlog! I've watched lots of Filipino food reviews on UA-cam, but always go back to your videos, because I love watching your reactions and your love for Filipino food. My favorite video is one where you first tried sisig at Mama Fina's and my other favorite was when you ate lechon kawali with the liver sauce (Mang Tomas). I live in LA, but will make sure I to visit Mama Fina's if I go to the East Coast.
I still can’t believe I haven’t tried a Filipino restaurant yet. However when I lived in San Diego, CA I went to work parties where I did have homemade Lumpia and Pancit!! I was hooked after that🔥
Have you ever had Ethiopian food? Trust me, it's another food too many people sleep on, and it's INCREDIBLE. I highly recommend just about any veggie curry, and lamb and mushroom tibs with injera. Hard to go wrong. Doro Wat is another must try (Spicy chicken and hardboiled egg stew.)
My wife is Filippina and I lived there for 2 years. Honestly the sisig with the snout and ears is tastier in my opinion. I love pork belly, but sisig is better with the spare parts. It has a better texture. Garlic rice is best with it I agree. I’d also recommend putting an egg in there. Adds another dimension.

Filipino food is slept on…and I mean legit stuff beyond Jollibee. First got turned on to it a few years ago, and man…sisig, lumpia, pata, sinagang, pancit, so many good dishes. Some of it is beyond my limits…I can’t process eating balut…but otherwise, damn good food.
Balut is some kind of delicacy so alot of people dont really have a taste for it including me and alot of filipinos so youre good you gotta try bulalo and arrozcaldo on a rainy day or when youre feeling under the weather/sick.

A buddy of mine I’ve known since elementary school recently had balut and loved it and if you eat the right pieces it’s pretty damn edible compared to what it looks like lol Give it a shot!
i made some lumpia the other week.. i put a little grated fresh ginger in mine.. and Chicken adobo prepared the tradit onal way marinating it then braising the chicken , then pan fry it with fresh garlic till golden top it with freshly squeezed lemon on top.. .. my sauce reduces to a sticky, syrup consistency.. i do not add sugar in mine that is Humba if you do add sugar .. . I add onion to mine it caramalizes in the sauce.. i serve it with adobo garlic rice or steam Jasmine ..

Dude, if you eat the crispy pata by itself, it will really taste salty but it won't be if you eat it with the garlic rice. The majority of Filipino dishes are served and eaten with rice. The fried chicken and the spaghetti - that's a fantastic combo.
The breakfast you're missing is Bangsilog (the Milk Fish sometimes they have lots of bones but usually they have boneless) and the BEST part of it it's Belly ask them if you can have the Belly part of the fish. the other breakfast is Tocilog (Tocino you can say just like Bacon but sweeter and softer and a lot of Pork Meat) if hope they have authentic snout and ears the Cartridge of that is you're going to like and the smoky flavor because it's grilled i hope you have tried the Tofu sisig lot's of mayo i always watch your video
Sisig with mayo is actually a big thing too in the Philippines more specifically here in Metro Manila-ish area. Filipino do love experimenting with their dishes. So the stigma of other cultures where they get angry on certain dish being wrong is not really that big here in the Philippines not unless you're really trying to ruin the dish. There is even one point around 2010-2012 where Filipinos loved putting pineapple on adobo gosh i remember those years.

The thing with filipino food is that there isn't really one recipe for all the food. Depending on the family or the province, everything is going to be different. Once you find the filipino spot you like, you probably aren't going to find anything else like it because they are probably going to be the only ones that make the things how you want them to be made.
