I tried a version when you reacted to the ravioli carbonara video, I did the same as you except I piped the carbonara mix around an egg yolk (like a ravioli Uovo). Tastes amazingly rich so I added chopped chives and it's great! Your passion is an inspiration, thanks.

I remember talking to about this maybe 1 or 2 years ago on a video chat when you did a fan meet and greet, I've worked my out but I use pancetta or I get small pork belly uncut and I season it myself and let it dry cure for a day in the fridge, I use pecarino and rainbow pepper corns you get a lot of different pepper flavors this way This is a great recipe and idea,

This is a nice idea! Much easier than Uovo Raviolo. Definitely going to try it. Btw, I've personally found that using semolina flour is best to keep the ravioli from sticking to the counter.

I've recently been filling ravioli with bolognese ragu and bechamel (one side ragu, one side bechamel, not mixed), but this is on another level. Curious to find out if these freeze as well as my creation.
if you can't find guanciale, you can try pancetta or bacon. It might not taste as good as guanciale but it will suffice. I hope you'll enjoy recreating this!

Vincenzo, I made this but I live in the woods and can't find ingredients, so I make my own. I made pasta out of crushed acorn flour and some sort of egg I couldnt identify, turtle? Snake? I dont know, but anyway, then I found a dead opossum and made guanciale out of it, and I made a cheese out of some of the milk from the opossum. I have to say, it turned out really really horrible. I think the opossum might have been rotten but Im not sure if that was the problem. Any ideas on what might have gone wrong? Thanks, Chef!
