    This is one of my best creations ever. It was my first time making it and the experiment worked out very well. I cant recommend this recipe enough. Please make it and enjoy this unique culinary experience

      Top dish. miam ! But 🚨🤦🏻‍♂️ stop using plastic cutting plates. H look at their knife marks and others, as a result we have debris from these plates in the food that we swallow, and the cancer that lurks.

      You conflicted yourself, you said 5 egg yolk and 1 full egg but than later you said to use whole eggs and it clearly looks like more then 1 egg white.

    I tried a version when you reacted to the ravioli carbonara video, I did the same as you except I piped the carbonara mix around an egg yolk (like a ravioli Uovo). Tastes amazingly rich so I added chopped chives and it's great! Your passion is an inspiration, thanks.

    This looks incredible! I may get out my pasta machine for this and my ravioli cutters ( I have different shapes, like cookie cutter molds). I love carbonara of all kinds but inside a ravioli? Sheer brilliance! I adore raviolis!! I’m nominating you for man of the year!!!

    What a great invention Chef, this is something you could market, Carbonara ravioli? Are you kidding me, that’s just awesome. A few years ago, I started making ravioli like your Nonna, it’s so much easier, once you get the hang of it, there’s almost no waste, so much better than making squares.     I remember talking to about this maybe 1 or 2 years ago on a video chat when you did a fan meet and greet, I've worked my out but I use pancetta or I get small pork belly uncut and I season it myself and let it dry cure for a day in the fridge, I use pecarino and rainbow pepper corns you get a lot of different pepper flavors this way
    This is a great recipe and idea,

    This is a nice idea! Much easier than Uovo Raviolo. Definitely going to try it. Btw, I've personally found that using semolina flour is best to keep the ravioli from sticking to the counter.

    I will definitelly try this ... though it is quite tricky to buy real guanciale where I live

      if you can't find guanciale, you can try pancetta or bacon. It might not taste as good as guanciale but it will suffice. I hope you'll enjoy recreating this!

    Vincenzo, what do you do with the dough offcuts? I tend to collect it altogether from all the batches and make a single serving of linguine but maybe there's a better application 🤔

      @ maybe a lovely beef ravioli, I think the creaminess of a duck egg pasta would pair really nicely with a relatively rich meat filling 👍

    Vincenzo, I made this but I live in the woods and can't find ingredients, so I make my own. I made pasta out of crushed acorn flour and some sort of egg I couldnt identify, turtle? Snake? I dont know, but anyway, then I found a dead opossum and made guanciale out of it, and I made a cheese out of some of the milk from the opossum.
    I have to say, it turned out really really horrible. I think the opossum might have been rotten but Im not sure if that was the problem. Any ideas on what might have gone wrong?

    There is a very exclusive restaurant in Rome. It's called La Pergola, 3 Micheline stars and the chef Heinz Beck is famous for his Fagottelli Carbonara. It's hard to beat that. 😏
