Just as a little tip for those who want to take it to the next level: Some pasta dishes appreciate if you break these rules just a little. For Cacio e Pepe, pasta alla Gricia or Pasta alla Limone and other sauces (Butter+Garlic, or Nduja and Onions) where the base of the sauce is for the most part an emulsion of pasta water and fat, I use considerably less water to cook, so the water gets extra starchy. For all of these "pasta water emulsion" sauces that also a lot of salty ingredients, like peccorino cheese, guanciale or pancetta, like cacio e pepe or alla gricia, I will use a lot less salt for the pasta water. All of these sauces, where the pasta water and fat emulsion is king, I also undercook the pasta in the pot for one or two minutes and finish it up in the pan for a bit longer, to get a better emulsion and to be able to thicken up the sauce better. For all other pasta dishes, where pasta water is not a major part of the sauce, but just an additive, I use plenty of water and make it "as salty as the sea", as explained. What a great summary of cooking Pasta, thank you for this video Vincenzo! One little hint regarding cooking time. If you are living high above sea level, like I do, remember that your water is not boiling at 100°C, it is boiling on a significant lower temperature. In that case you have to cook your Pasta for longer as recommended on the box, find out your time kompensation for your altitude. I also strain my Pasta into the sink, and simply put a cup under the strainer, so I have always some pasta water at hand. Happy cooking...

@@vincenzosplate At least I know for sure what ingredients I am putting into my body when I make my own foods. One thing I do have to have when eating any Italian dish, is a fresh grated 2/3 Parmesan and 1/3 Mizithra ratio mix to top my dishes off. I just put both in a bowl and mix it together. There's just something so delightfully heavenly that Mizithra does to my tongue. LOL I even use it when making Grilled Cheese Sandwiches with my own homemade Sourdough bread. Just adds a special punch to it, to take a normal Grilled Cheese Sandwich to another level.

Vincenzo is absolutely right. The other night I made my own simple tomato and basil sauce, and mixed the pasta with the sauce and it really was a difference from how I was eating pasta before (pouring the sauce over the pasta already plated). Step 6 - If you use tongs you may not need to add starch water since they will still be dripping water. Step 7 - Watch the pasta, it will change color, that will tell you when the mantecatura has occurred. It can take from 30 seconds up to 3 minutes but usually 1 or 2 minutes depending on the pasta.
If you cook pasta with enough water in the pot, and don't over crowd you don't even need to stir it.... Test it.. Just use a small pot, bring water to boil and add about 4 raviolis.... Turn down to a gentle boil.. You can actually see each of them turn over ... It's a great little experiment... amazing! I have a video but can't seem to upload it.

Many many thanks my friend! 😘
I always bite test a minute before the box time and I can tell how much longer it will take.
impressing my Italians friends with my pasta and pizza and coffee are the biggest compliments i ever receive
Wooow 😍
I made carbonara last week using the best pasta, eggs, and pancetta I could find (guanciale not available in my small town). My guests raved about it!
Great job Kristina 😍 brava 👏🏻
As a Chef and as a woman who was taught how to make pasta from scratch, when I was young by a very adorable Italian Grandma...I make my own most of the time. And, I cook it exactly how you showed us. I just subbed you...I'm going to enjoy trying out your recipes. Thank you!
That is awesome Amanda! That's the proper way to cook pasta like a Pro!
I eat all Vincenzo’s recipes with love!

So sorry for your loss, but I'm glad my channel can help keep those memories alive! Keep cooking those traditional Italian dishes with love ❤️👨🍳🇮🇹
Vincenzo, can you please tell me what you mean by a large pot? What is the average size (or litres capacity) you use to cook the pasta?. Thanks!
I typically use a pot with a capacity of around 5-6 liters to cook pasta. It allows enough space for the pasta to cook evenly. Happy cooking! 🍝😊
Vincenzo you were right! Thank you! I’ve always loved Italian food but this has helped me take my cooking to the next level! Grazie mille maestro!

@@coolhomeschool2267 Yeah, that could work but I have not tried it yet.
Vincenzo is absolutely right. The other night I made my own simple tomato and basil sauce, and mixed the pasta with the sauce and it really was a difference from how I was eating pasta before (pouring the sauce over the pasta already plated).
Even making your own sauce makes a difference. For years I bought premade sauces, but after making my own tomato and basil sauce I can't go back to storebought sauces.
My next step is importing real parmeggiano or pecorino cheese. Cheers Vincenzo. Have a wonderful day.
That's wonderful to hear! 🍝🌿 Homemade sauce really elevates the flavor of pasta, and using real Parmigiano or Pecorino cheese will take it to the next level. Enjoy the journey of cooking and savoring authentic Italian flavors. Have a fantastic day! 👨🍳🇮🇹

So, damn near every Italian Restaurant in America then?
I recently made carbonara for the first time ever; I couldn't get any guanciale so I used pancetta instead, and I thought the sauce was the right consistency so I didn't add any pasta water and it worked well for me. It was so odd to not put garlic in a pasta dish since I love garlic but this may be the first thing I've ever made that I think garlic would've ruined.

This is amazing Daniel 🤩 great to hear!!
I am so glad that you taught us how to judge good pasta by its color! I feel like now I can go apply for an Italian passport! 😁

Vincenzo I have been trying to make your fettuccine Alfredo but every time my parmesan cheese sticks together and clumps up. Any ideas why this is happening?
not sure how he made the alfredo but when making similar dishes like cacio e pepe or pasta alla gricia, i grate the parmigiano and then slowly stir it into the pan while still hot like 1-2 tbsp's worth at a time while adding the hot pasta water as needed to create the sauce. perhaps this technique will work with that too.
@ I think I need to let the cheese dry out a little and have the bowl super hot and reboil the pasta water.
Wait till the pasta get colder
