I recommend buying flour from a small local mill; it's ideal. Don't hesitate to make a large quantity and freeze them. You'll find that industrial pasta pales in comparison!

I have made it several times so far and the pasta comes out amazingly, however in the Un8ted States our eggs are about 6 grams lighter than in Italy so I have to add water to make the dough come together. My next purchase is a pasta roller, I have been hand rolling with a rolling pin and it is quite the workout. Thanks again for all the great recipes and information,I have learned a lot from watching your channel.

My household is not a fan of ricotta so I tried your recipe with bechamel sauce instead that I added some Parmigiano Romano and a bit of mozzarella to. There are 3 of us and we finished a 9x13 pan in 2 days,it was the best lasagna I have ever had. I also started putting carrots and celery in my sauce and it is a huge game changer. To anyone that has acidic sauce I suggest adding carrots and celery and cook uncovered and ypu will be amazed.

Once frozen, it's best to thaw the pasta before cooking it. You can let it defrost in the refrigerator overnight or use the defrost setting on your microwave. Then, cook it according to the recipe instructions. Enjoy! 🍝😄

Gluten free pastas require a lot of pressure to be made. You COULD try with fine rice flour. But everything else must use a more "professional setting" otherwise it wont hold and will break when boiling.
In Italy, the best flour for homemade pasta is usually "00" flour, which gives pasta a smooth, silky texture. The semolina flour provides more texture and bite. It depend how you prefer your pasta
