    Chef Jean Pierre has honestly one of the best cooking channels on UA-cam. It really gives me the vibe of old TV cooking shows, and there is something so nostalgic about that makes me want to keep watching.
    Also, Jean Pierre is genuinely a good guy and deserves all the love he gets.

      Jean Pierre is the real deal and probably the best out there along with Marco Pierre White, who bossed Gordon Ramsey about as a newbie cook years ago.

    I love Jean Pierre. He used to run a chef school in Fort Lauderdale, FL. He retired from that and started doing You Tube, but his catch is. If you watch his video once and like it. Then you can get the ingredients and cook along with him the next time. Thats why he doesn’t cut video much. He wants you to feel like you are being taught at home. It was a Covid thing. He is an amazing person in real life so very humble and giving. When you said you feel like your in the kitchen with him. Thats exactly what he is going for with his videos.
    Flipping the pasta. Well he’s no spring chicken. He tried but remember he’s been a chef for 50 years and thats the truth.

      That's a heavy pan without tall, curved edges that you want for tossing. If I had a glass top induction stove like that, I wouldn't be tossing a pan on it either. I'd be too afraid of slamming the pan into the surface and cracking it.

    Chef Jean Pierre (for me personally) is one of the best chefs on UA-cam. Whether you're a beginner or know the basics, he always reveals the right way to use ingredients. He doesn't insist on precise measurement or ingredients, but explains the background of everything. You, Vincenzo, learn precision when it comes to Italian cuisine and refer to the masters (Lucio, Vito, Johnny Di Francesco...). Thank you V. and greetings from Croatia!

    Chef Jean Pierre is the best, been a fan and love learning to cook watching his channel. He is flexible so never felt pressured if i don't have the exact ingredients.

      Do NOT use Pancetta for Carbonara, too salty. Speck would be too hard but is better tasting than ANY bacon. I have not tried bacon.

      Vincenzo only praises his Italian side (from his mother's side), not the French side! In fact if you noticed, he himself put aside the French flag and left only the Italian flag ! 🇮🇹😉

    Vincenzo, i went to a homeless guys place here in switzerland (Oerlikon) and made Carbonara for them. I was a bit nervous but i had a resounding applause when i went out after serving them. It was amazing. 60 People are feed and everyone asked for more but instead told them how it‘s done with not so much money and i feel amazing having done that. It‘s just because i watched your videos and asked the ‚Rot Kreuz‘ if i could do Dinner for the homeless guys here. Thank you my brother ❤

    I remember my "nannie" (the equivalent of nonna in my region of France) shouting at me that I was disrespecting the eggs by using a whisk instead of a fork!! Toujours à la fourchette!!

    I just discovered both of you the other day looking for the most authentic and flavorful meatballs and spaghetti sauce. My grandparents were from Calabria and Naples. I have grandma's recipe passed down to me. I no longer want to use the depression era canned Contadina sauce or paste. So I am testing both your recipes of meatballs and sauces. Jean Pierre's meatballs and sauce were pretty good. Will be trying your recipes in a few days. I want to bring my meatballs to a Super Bowl party! I appreciate you and your personality! It's all about the LOVE! And, I want to get back to my authentic Italian roots because grandma has passed many years ago.

    Chef Jean-Pierre is the man who got me into cooking. I used to help in the kitchen as a kid, but it wasn’t until discovering his UA-cam channel in college that I finally discovered a true passion.

    I can explain why people in the US put oil in their pasta while they're cooking it. It is because that's how most people were taught how to do that growing up. They were taught if you add oil and salt to the boiling water while cooking pasta that it would help it not to stick together or stick to your pan.
    Now since watching your channel and pasta grammar, I have learned a lot about cooking pasta properly. Thank you very much for doing the videos and educating us.

      yet, they typically do not salt enough, if you do SCUBA you are very familiar with how the water should taste AND when it is too much as well. I have not used oil is decades, also it does NOT work.

    Chef Jean Pierre is the absolute best & a straight comedian! I watch his channel as much as yours, so believe me with all due respect brother, he’s been cooking at a high level before we were born. His mom was Italian and his father was French-wouldn’t allow him to speak Italian in the house. He’s a perfectionist.

    Oh man, I was watching a Guga vid a while ago and Leo was talking about how he always breaks pasta and cuts it when he eats it lol. I thought of how you'd react to that haha.

    I love when a chef makes a recipe like it suppose to be.. Keeping the tradition alive is what it's all about.. Jean Pierre knows his stuff and makes cooking fun.. Vincenzo you bring much more to traditional recipes. We who watch your videos want to cook like an Italian.. Well at least I do.. Thank you you bring me to my happy place watching your videos.

    Great reaction video. For anyone paying attention Jean-Pierre used metal tongs on a nonstick pan. One might think that would scratch the pan but according to him he's been using that pan for years. However, you just not recommend using metal on a cheaper non-stick pan. The one he uses is a Wohl.

      Just do not touch the pan, I use metal with silicone tips so I can use any pan and be a klutz anyway.

      Nothing like cooking with gas! Analog interface with flame, you can tell at a glance what you are doing.

    Chef JP is the most wholesome chef on the internet, kind and funny and humble and absolute perfect❤❤❤
    He's the only chef that tries his food at the end and gives actual feedback and admits a mistake. Many times he say something is wrong and figures it out, either too much salt or too little, or some ingredients missing. Who else does this? NOBODY
    His recipes are also great btw😂😂

    Jean Pierre is easily one of my favorite chefs. He is very much like the man I learned from. I came here after watching Ramsay hack together a pasta dish with zero presentation, and Jean Pierre and Vincenzo restored my faith in humanity.

    Reason for oil in water is that evaporation has two effects: 1. evaporation cools the surface (that’s why You sweat) 2. your water evaporates = is getting less => oil is lighter than water and stays at the surface, so that the surface of water to air is zero and hinders it to evaporate = surface doesn’t cool so fast -> temperature of boiling water can be higher/ maybe it is faster ready/ you save energy! It’s something we used in chemistry lab to be sure the water doesn’t evaporate after >2h boiling.

    Chef Jean-Pierre is my fave teacher! I am 62yrs old, and from hating to cook, he made me love cooking! He is a fantastic teacher, and all the advices he has given through the years I have been following, amazing, life-changing for me. It is the little things that matter!
    And this dish... my grandson loves (×1000000) bacon, so I always tops the dish with crispy bacon. (He could eat just bacon for dinner!😅)
    Btw, love your vid about parmesan... and I had to check... got the 24 months old PR. ❤

    P.S. I'm an all egg guy, but sadly I don't do pasta anymore ... diabetes, etc., etc. ... My Nonna (RIP) from Resiutta is probably turning over in her grave knowing that I don't make her Gnocchi con Sugo (beef shank) anymore. 😥 (I just do the Sugo by itself.)

    I love chef JP. I’ve really got into learning to cook recently and he was my first go to for recipes and ideas, found you about a week ago and now you are my top 2. I’m cooking for friends today and I’m using your beautiful tomato sauce and jp’s green beans with sun dried tomatoes 🍅 🫘

    Chef Jean-Pierre made me like cooking. He does not scare us with too complex recipes. He is a teacher.
    I live in Japan so it is sometimes hard to find the ingredients. I just ordered the head of a pig and will try to make my own guanciale.With the rest, I will do a tête fromagée!
    Vincezo is hilarious.I love his cooking too. Of course I still screw up a lot.

      @@vincenzosplate We have two Italian deli's, an Italian winestore and a direct Italian import in town, all have Guanciale, but it's not always convenient to go there. Having a source around the corner is so much handier.

    I believe Jean Pierre's mother was an Italian Chef in France. He has mentioned her before when preparing Italian dishes.

      Mine too. I also follow the Brooklyn Brothers. They have good recipes but may be more Italian American than authentic. They look delicious though.
