Hi Rachel, I like your version of eggplant parm.. Being Italian, our version is somewhat different but I like your version. You could also put a thin layer of ricotta between the layers. That is very good, as well. Another great recipe. Take care🤗

Thank you for another way to make eggplant I came from a large Italian family that made an eggplant casserole with hard boiled eggs and sauce all vegetarian. Don’t get me wrong ,it is delicious,but I love your eggplant parmigiana idea too. I’m going to try it as soon as the eggplant is ready to harvest from my garden. Meanwhile I might try to improvise with zucchini because they are here in abundance. Thank you again I love watching you 😊

The best eggplant parmigiana that I have ever had was in Sicily. Oh my goodness. It was baked, not fried, and served as a starter as a tiny casserole and not a main dish. I'll never get the chef's family recipe for his parmigiana but I love to play around with recipes. This one looks delicious. I've not had the dish served with a meat sauce but I know my husband will enjoy it. And, yes, I do want you to create a video featuring that lovely salad with homemade dressing!
