I made a variation of this recipe and swapped out the cream for cream cheese and sautéed in butter. The combination of cream cheese and cucumber, especially in sushi is so perfect, so I wanted to try it in this Vichyssoise. I was not disappointed! YUMMM! I did want to warn anyone cooking for a family - the cucumbers and lettuce do cook down a lot. I started with 8 medium sized cucumbers and 4 loose heads of lettuce from the garden - about 8 to 10 packed cups of veg - the end result was a 750 gram yogurt container of Vichyssoise and a cup of dip, saved from what didn't pass through the sieve after blending. It's good and worth the effort, but you definitely need a lot of veg to get a meal. It's perfect for gardeners with glut yields all at once! Now, onto the next recipe...Chicken LETTUCE Soup! Chow!
Don't you blend ice cubes with the soup for quicker cooling? Instead of leek can one add chopped onion or garlic? Also, chill it in the fridge for an hour or two before eating?
