At the meantime, I really like your recipe, especially the secret of using some milk and sugar. These 2 ingredients made so much difference.

I did this exact recipe except I blended a quarter of the eggs and mixture in the blender and mixed with the rest of the eggs. It came out very creamy with chunks. Omg love this recipe!🤗😊😁

Tamago Sando in Tokyo was as advertised - outstanding. BUT, at Seven-11, they also have a version that replaces the bread with a Korean 'bao' that's lighter than clouds. By the way, when making traditional tamago sando at home, we found US mayo was inferior to Japanese Mayo in that while US mayo uses the whole egg (white and yolk), Japanese mayo only uses the yolk - ergo a much richer flavor in Japanese mayo based tamago sando. Some Japanese sandwich shops also put some green onion in their egg mixture as well as whole egg slices.
I ate tamago sando from Seven Eleven everyday for breakfast during my trip to Japan. They were definitely the best egg salad sandwiches I've had.

I like to use honey instead of sugar and a bit of karashi mustard. I also use brioche bread when I can’t get shokupan and American cheese 😋.

I replaced the milk and sugar with vanilla almond milk and it came out sooo good.
