      U can use basmati tukdi instead of dosa rice, but idly rice is a different rice, using idly rice I'll give better taste and texture of dosa.
      If you couldn't able to find idly rice, u can proceed with the same basmati tukdi👍🏻

      Well it's an Indian stone wet grinder, u may find it any Indian website to procure, or you may use food processor...(but there I'll be texture difference)

      Start with high flame, after 40secs medium flame, sprinkle little water before making every single dosa👍🏻

      I didn't use any particular brand, bought the loose one supermarket. More than brand the ratio, grinding and fermentation process results best👍🏻

      Grinding in wet grinder will results better taste and texture 👍🏻

    AFTER GRINDING METHI TO A SMOOTH PASTE SHOULD IT BE ADDED TO THE RICE AND DAL FOR GRINDING OR DO YOU ADD METHI PASTE TO THE GROUND RICE AND DALL BATTER BEFORE FERMENTING

      I think u must focus on the fermentation process, (after overnight fermentation mix well and refrigerate immediately) if that's good, then increase bit more sugar to the batter and try, definitely you will find gold👍🏻☺️

      Hi, make sure you follow the recipe n ratio as mentioned in the discription,
      - Batter should not be over fermented,
      - Tawa must be seasoned properly
      - Add sliced onions, salt and oil in to the tawa and saute for some time
      - Then wipe the using half cut onion & drizzle some water
      - Follow above instructions to make crispy dosa...👍🏻

      No issues you can add, while grinding the batter becomes warm, so leave the batter in warm place somewhere near gas stove, definitely the fermentation process I'll happen, give some extra hours...

      There is no particular name for idly rice, kindly Google, you will find images, it's big round grains...
      If you couldn't able to find, then use only the dosa rice...
      Dosa rice - can be any raw rice, not steamed not par boiled...
      Also you can substitute the whole urad dal with split one no issues... But kindly wash enough before soaking

      Idly rice is nothing but starchy par boiled rice, dosa rice is regular raw rice.

    Looks yummy crispy Tamil cheff..!! Grinding Methi seeds separate is the unique thing here?! I think tat added Bengal gram n Sugar too contributes, right?!

      Yes grinding Fenugreek seeds will helps to get smooth paste, so that the Fenugreek does the job in batter, yes also those Bengal gram dal and sugar helps to provide better colour and taste to the dosa😊

      Hello chef.. Am doing dosa batter selling in uttarakhand.. Naan tamil sir. Thanks for lovely tips. Sir can let me know if we can add sugar after fermenting and then pack or before.. Also raw rice is sona masuri rice or any variety we should get.

    What is raw rice? Is it the rice we eat?

      All the rice are categorised into three...
      Raw - Paddy removed
      Steamed - Slightly steamed and paddy removed
      Par boiled - Usually big and harder rice are processed in this method and paddy removed.
      So we need use any raw rice which is not steamed or parboiled 👍🏻

      Not paddy removed, the skin(husk) removed. Paddy is whole grain with the brown skin(husk). The white seed inside which is separated is rice grain. Please no hard feelings.
