English Translation with US Customary Measurements: Dosa Batter Recipe Ingredients: • 1 1/3 cups idli rice • 1/3 cup poha • 1/3 cup urad dal • 2 tbsp chana dal • 1 tsp methi seeds • 1 1/3 cup rice flour • Salt to taste • 1 tsp powdered sugar In a bowl, add the rice, poha, urad dal, chana dal, and methi seeds. Potato Filling Recipe Ingredients: • 1 tsp mustard seeds • 1 tsp urad dal • 1 tsp chana dal • 3-4 dried red chilies • 2-3 green chilies slit lengthwise • Small handful of whole cashews • 1 onion finely sliced lengthwise • Salt to taste • ½ tsp turmeric powder • 4-5 boiled and peeled potatoes, soft to touch, and roughly broken by hand into medium sized cubes • Small handful of chopped cilantro • Juice squeezed from ½ lemon Heat oil over medium to medium-high heat. Fry mustard seeds till they start sputtering. Add urad dal, chana dal, dried red chilies, green chilies, and cashews. Fry for a few seconds till all starts lightly browning. Add onions and stir fry till onion starts wilting. Add salt and turmeric powder. Add potato. Mix and keep stir frying. Please note that the ratio between onion and potato should be nearly equal. Garnish with cilantro and lemon juice. Red Chutney Recipe Ingredients: • 10 Guntur chilies • 15 Byadagi chilies • ½ spoon black pepper • 10 garlic pods • ½ onion • 2 tsp roasted chana dal • Salt to taste For 10 minutes, soak the chilies in hot water. Once the chilies have softened, place all the ingredients into a blender and blend until you have a thick paste consistency.

Ma'am sorry for my belated reply. The measurements are as below. One cup dosa rice + 1/4 cup urad dal + 1/4 cup thick poha + 2TBL channadal +1 TSP methi seeds. All these ingredients soak for 3 hours. After grinding, add 1cup rice flour. Mix to dosa consistency. In the morning add salt and 1 TSP sugar. And you can make dosas as usual. If any doubts you can ask me ma'am.

I tried, it came out very tasty. I didn't add cashews in potato baaji, becoz my family doesn't like cooked cashews. Red chutney was awesome, felt the same taste of Mysore masala dosa. Regarding crispiness of dosa, even without adding rice flour or poha, crispiness comes out well, but need to add menthya instead. Anyways, I tried your style of dosa batter too, it too is good. Thank you for your time and patience in sharing the recipe.

1/4 urad dal
1/4 flatten rice / poha
2 spoon chana dal
1 spoon menthya / methi seeds
Wash and Soak for 3 hours and mix 1 glass of Rice Powder and allow to fermentation for 6-8 hours , add salt and make dosa 🎉🎉
