It's a good game but the AI can be drawn into traps - you will be able to handle higher odds than that and it feels good to face down foes like that. Get a few spear on your flanks to help against their cav.
If you noticed the enemy force, they're all recruits, not even a single non-lord cavalry, while he has crossbowman, cavalry, and high tier infantry and flanking high tier cavalry. Looking at it a bit more closely, there are more cavalry, but with a weak infantry against a strong ranged, there's not much sparce cavalry can contribute other than scrambling until dead. He's not bad at the game, man's probably looked at the enemy ountline of the forces and knew it would be easier than an your average army of 400 something when at war.
Some people, many people I would think, like to play video games to relax, and often putting a game on an easy difficulty to feel powerful and reduce any stress or annoyance of dying/being beaten helps with that. No shame in it. One of the things that makes video games great; you can play by the rules you want. Unless you're playing a Souls game, of course, then you need to git gud.
your army was much stronger at the start already. against recruits you can win 5 vs1 or more.
