1 lb. 80/20 Ground Beef
Salt and Pepper to taste
1 White Onion, chopped
2 tbsp. Chili Powder
1 tsp. powdered garlic, and onion powder
½ tsp. Mexican oregano
2 tsp. Cumin
¼ cup Flour
2 ½ cup Beef Stock
12 oz. medium Cheddar from the block, freshly grated
12-16 fresh Yellow or White Corn tortillas

This turned out so good. I used flour tortillas and added total seasoning & a little crushed red pepper, since I had regular oregano instead of the Mexican one. Delicious 😋

So good. Make it New Mexico style. Layer them up like a lasagna, Tortilla, sauce and then the cheese, and go up three layers. Top off with the cheese and onions on top and put it in the oven to heat them up for like 10 mins covered with foil, take the foil off and back for just a few minutes. After, fry an egg, or 2 and we thrown them on and puncture the eggs to let the yolk drip all over the enchilada’s and oh man, it’s heaven in your mouth😋

Have you been to New Mexico the enchiladas here are the real authentic type of enchiladas.
Honestly, in my opinion, New Mexican style foods are some of the best meals you'll ever try. If you have real New Mexico, Hatch Green Chili, then that's a plus right there.
