    Hello, I am Casayun.
    Today, I will be sharing how to make puff pastry with almond filling.
    Puff pastry is just an ingredient you buy from the grocery store freezer section, right? But it doesn’t compare to this homemade version.
    Only with 4 ingredients, you can make this amazing puff pastry easily at home!
    Just keep in mind when making these kinds of pastries is to keep them nice and cold at all times and follow the process of folding several times. There is no difficult process at all!
    Puff pastry is a delicate, light, and flaky pastry that can be used in countless different ways. Apple pie, danish, tart, etc… And you can store this pre-made puff pastry in a freezer for a several weeks.
    So easy and practical puff pastry, you will never buy it at a grocery store anymore 🤗👍🏻

    Almond pastry
    6 servings
    - Dough
    Cake flour 200g
    Salt 5 g (1 tsp)
    Cold unsalted butter 190g
    Cold water 70g
    - Almond filling
    Unsalted butter 50g
    Sugar 50g
    Egg 1
    Almond flour 55g
    Cake flour 7g
    Please prepare ✔️
    * Cut butter for dough into small pieces and prepare cold.
    * Leave the butter and egg for almond filling at room temperature for at least 30 minutes to 1 hour to get rid of cold.
    1. In a clean bowl, put cake flour, salt, and cold butter. Cut the butter into very small pieces using a scraper and mix it with dry ingredients well. (No hand kneading)
    2. When the butter is cut into very small pieces, add cold water and combine. (Do not use hands) When the dough is roughly clumped, put it in a plastic bag and roll it with a rolling pin. Let it rest for 1 hour in the refrigerator.
    3. After 1 hour, bring the dough to the workbench. Using a scraper, fold the dough in thirds. Roll out the dough and fold it in the same way once more. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes. (15 minutes in the freezer) Repeat this process about 2 to 4 times.
    4. Prepare almond filling. In a bowl with butter, add sugar and mix lightly. Add the rest of ingredients and mix all together.
    5. In the last fold process, make the dough into about 45 x 20 cm rectangle shape. Divide it into 8 pieces using a round cup with a thin rim. Take a smaller round cup and make a hole in the middle of the 4 divided dough (donut shape). Place the doughnut shape on top of the round dough. Cover the top and chill it in the refrigerator for 20 minutes.
    Gather the rest of the dough and put it in a plastic bag, roll it with a rolling pin, and harden in the freezer for about 20 minutes. You can make 2 more almond pastries with this dough.
    6. After 20 minutes, fill almond filling in the middle of the dough. Brush with an egg wash and bake for 20 minutes in an oven preheated to 190℃ (374℉).
    (Baking time may vary depending on the oven specification. / Take it out of the oven when the rim starts to turn brown.)
    7. Put the baked pastries on a wire rack and allow it to cool completely.
