The Quickest Way to Make Biscuits: Easy Drop Biscuits

  • You can make these tender, fluffy Drop Biscuits in just 20 minutes! This easy drop biscuit recipe pairs well with soups and chowders for a simple, fast dinner.

    Ingredients
    8 Tablespoons unsalted butter
    2 cups all-purpose flour (250g)
    2 Tablespoons granulated sugar (25g)
    2 teaspoons baking powder
    1 teaspoon table salt
    ½ teaspoon baking soda
    1 cup buttermilk (236ml)

    Instructions
    00:00 Introduction
    00:31 Arrange a rack to the center of your oven and preheat oven to 450F (230C).
    Line a baking sheet with parchment paper and set aside (alternatively you may bake biscuits directly on ungreased baking sheet).
    00:37 Cut butter into 8 pieces and place in a microwave-safe bowl. Heat in 15 second intervals, stirring in between, until melted. Set aside to allow to cool.
    00:48 Combine flour, sugar, baking powder, salt, and baking soda in a large bowl and whisk until thoroughly combined.
    01:16 Pour buttermilk into a large measuring cup or medium-sized bowl. While whisking, slowly drizzle in melted butter until combined (it is OK if the butter separates a bit).
    01:35 Pour buttermilk mixture into flour mixture and use a spatula or spoon to gently fold together until ingredients are just-combined. Don’t overmix or the biscuits may be dense and dry.
    01:54 Scoop batter by approximately 3-Tablespoon-sized scoops and drop on prepared baking sheet, spacing biscuits at least 2” apart.
    02:19 Transfer to 450F (230C) oven and bake for 10-12 minutes or until the tops of the biscuits are beginning to turn a light golden brown.
    02:25 Remove from oven and allow to cool on baking sheet for several minutes before serving. If desired, brush additional melted butter over the biscuits while they are still warm.

    So I just made a half a batch of these in my air fryer . I didn’t have buttermilk so I had to substitute it with sour cream and a little water. I was tempted to leave out the sugar, but I’m so glad I didn’t. These are the most delicious things that I’ve ever tasted!!!

    Just made this recipe (except used reg milk, didn't have buttermilk) Very good!! I will say unless you are making these for a dessert biscuit then next time I will use only 1 Tbs. of sugar. A tad sweet for a regular biscuit.

    Just made a double batch of these and they were a huge winner with the family. Crunchy but moist and fluffy on the inside.
    I left out the sugar and added a chunk of cheese in the center with fresh chives. Super yummy with soup!

    As to the buttermilk. I have often gotten started in a recipe calling for buttermilk only to find I had none. Add a few drop of lemon to regular milk…wait about two minutes and you’re ready to go!

      They sell buttermilk powder in the store. I always keep some in my fridge. You can either reconstitute it or mix the appropriate amount into the dry ingredients and sub milk into the wet.

    I grew up in North Carolina and my mom always made drop biscuits once the kids got older. When we were little kids though, she would roll out biscuits and let us make crunchy little cinnamon sugar shapes from the dough scraps

    We make them this way except we use lard for a better flavor plus it is cheaper. Butter is pretty high. Canned biscuits have really gotten expensive and this way is so fast and easy and not messy. Great biscuits and gravy.

    Thank you so much your biscuits are so mouth watering. Mom loved them (my mom) I do all the cooking in the house as she's not able. I couldn't remember how to make biscuits but remembered I had a cooking lady who made a variety of entree's. Only thing I had changed was the buttermilk, used lactose free milk

    I just woke up hungry for biscuits like my old grandma made on her coal stove in west va. I didn't want to spend an hour and only had so many ingredients ! I made you recipe and they came out excellent . Not dry , tasty ,light. I had three big ones ,I only made 8 biscuits so mine were a little large .

    I tried it out instead I did 1/2 stick of melted butter 1/2 stick frozen grated butter and a little more butter milk. I topped it off with a garlic buttery sauce

    When I measure the flour, do I pack it in and flatten it or just use the measuring cup and scoop it and not flatten it out completely? (Sorry it is hard to explain this through text and not out loud lol)

      Always scoop and then level with a straight edge, don't ever pack it in. I hope that helps!

    Hi Sam, this dough can be versatile in making the business savoury with herbs and cheese or sweet with berries or raisins/dried cranberries) reduced sugar type.
    Also how many times would you test a recipe before perfecting it. I sometimes feed defeated if my first trial is a dud😊

      This is definitely a versatile base! Sometimes it depends. Sometimes I can nail it first try (that's really rare) but I've been working on a pumpkin roll for so long and I just can't get it right. I have honestly probably tried 100 times. I will try for a while then I will table it for a while then try again.

      You’ll need a bit less whole milk and they won’t have as much flavor but it could work!

      You know what? No one's answering after a year. I'll try..
      If you use melted butter you can probably use ANY melted oil. It will change the flavor though. Maybe melted coconut oil would be good.

    I followed the reciepe exactly but some how mine tasted way too salty😔😔 maybe I didn't melt the butter right or something. I did use unsalted butter but I don't even know how I messed this up because I did follow the reciepe 😔

      Unfortunately I’m not sure how that could happen either. I’m sorry. 😔 normally I’d say it’s because you used salted butter and added salt but that doesn’t seem like the case.

    I used margarine instead of butter and they did not turn out crispy like yours. They taste and look like a kind of bread.

    Ok, l just made them. 10 mins at 450 is too hot, too long. 🔥 The bottoms burned. Next time l'll try it at a lower temp & let them stay in a little longer.
