How to Make Biscuits - The Victorian Way

    Mrs Crocombe, the Victorian cook, is going to bake some Queen Drop Biscuits for Lord and Lady Braybrooke in the kitchens of Audley End House.
    Follow her authentic Victorian recipe and try making a batch of your own biscuits using this classic recipe at home:
    INGREDIENTS
    3 Eggs
    225g Butter
    225g Sugar
    225g Currants
    350g Flour
    2 tsp Almond Extract
    METHOD
    Preheat your oven to 180 degrees Celsius (350 Fahrenheit). Cream the butter and sugar together until pale and fluffy. Mix in the sifted flour and one egg at a time. Mix together well and then add your currants and almond extract. Using you hand or a tablespoon, drop equal quantities of the mixture onto a greased baking sheet. Don't put them too close together as the mixture will settle and expand outwards. Bake for about 10 minutes until they are firm to the touch. This recipe makes around 24 drop biscuits.

      They're currants not raisins. Currants are a much smaller grape variety. They're more tangy than raisins.

      @@psammiad Currants are not a species of grape. They are a berry. The Zante currant is a (poory named) raisin variety, but in that case they would specify Zante currant.

    yes, Americans would call those cookies. It's almost impossible to find currents so id use raisins, a slightly sweeter alternative.

      I tend to find currants in the organic/nature's market area of my grocery store so you might want to try looking there.

      you can sometimes find them next to the raisins. It depends on the type of store you are in. Sometimes too if you are in a specialty baking store you can find them. :)

      That kind of a greeting isn't necessarily of the time period. From my understanding, "hello" did not come into use as a greeting until the telephone. Before that, "hullo" was an exclamation, rather than a greeting.

    For the Americans among us:
    Preheat your oven to 355˚ F.
    You will need:
    3 Large grade A eggs (I needed four)
    2 Sticks of butter
    1 1/4 Cups Sugar
    2 3/4 Cups Flour (measured pre-sifting)
    ~2 cups Currants (this is really personal preference)
    1 tsp Almond Extract ( again personal preference but my guests found 2 to be too much.)
    They Baked for around 12-15 minutes for me. And this recipe made about 36 biscuits.

    Me and my fellow students tried this recipe
    At first they said “I don’t like currants in my biscuits I want chocolate chips”
    And after we finished baking they all said “that smells amazing I want to eat all of them”
    They finished the whole batch of biscuits in 10 minutes😂

    They are delicious :D I made them with raisins since I don't have dried currants yet but... That's a project for autumn then :) I'll save some of my currents to dry them and rebake the biscuits with the currants then :) I love this show, how accurate it is and with how much love you produce it.       Considering the Brits were the first to make modern chocolate in 1847 and the Victorian Era was 20 Jun 1837 - 22 Jan 1901, I'm sure someone out there had tried it.

      "Chocolate Chip Cookies" were invented in 1938 by Ruth Graves Wakefield the owner of the Toll House Inn. She exchanged the recipe for a lifetime supply of chocolate from Nestle, who then mass produced her recipe and sold it under the "Toll House" brand that still exists today.

    I use chopped up dried cherries instead of currants. Really nice with the almond flavoring.

      I find that even with oatmeal cookies, that i LOVE to combine almond extract with cherries! If using maraschino cherries, I chop them and toss with a bit of flour. Also, for Christmas i make a "signature"cookie, which is a "cherry kiss". It is simple, however it does indeed feature almond flavor. I also love spritz cookies with almond flavor. I so love these videos! When i have watched them all, I will re-watch! Please create more!!!!

    I just made this for Christmas Eve party and children and adults alike were begging for more. With currants like in the video and another batch with chopped dried apples and candied ginger, all turned out wonderful. They weren't too sweet, and deliciously almondny (I used Nielsen Massey pure almond extract, and 1 tiny drop of vanilla) will be making this again and again in the future for sure.

    OMG This was one of my mother's recipes all through my childhood, except we used raisins instead of currants and no almond extract (we were seriously poor). Later, I made these for audition nights for the university theatre group I stage managed for. Everyone really like them, but I can see that the almond extract would have been really helpful. So good to find out where that recipe came from. Thank you!!

    This is so cool we lived in an old victorian house when i was little. The kitchen was really big so the "modern" section had the normal appliances but the victoria oven and stove was never taken out because they were both to heavy to move. Its so intresting to imagine who stood at those very appliances and made the recipies your cooking!

    Mrs Crocombe seems like she'd be happy to help if you got stuck, like she wouldn't shout at you if you made a mistake, but also like she cares not just about her employers, but the others who work with her, she seems really friendly.

    To fellow Americans: I’ve been living in Scotland, where recipes are like this one, by weight. I found that getting a kitchen scale solved all conversion challenges. You put a bowl or dish on the scale before turning it on so it “ignores” the container and measures food only. You of course set it to measure in grams, NOT ounces. Then slowly add the ingredient till the scale says you have the amount the recipe wants. The American measurements seem easier but it’s just cuz we are used to it. The scale helps me measure out things like noodles, too, because the packages give serving sizes in grams. Oh, and yes these are definitely cookies. They seem like our butter cookies.

    I have just made these at home. I had to convert the measurements since we don't use grams in the United States. (It's very upsetting to me.)They aren't the best looking, but they taste good.

    I adore this channel and especially this series! There's something blessedly sophisticated and elegant about Victorian culture and history! As an American, our history wasn't very elegant, no room for lords and ladies, as it were. Though I wish we did! I just living history, thank you for sharing with us!
