How To Make Whiskey Date, Fig, and Walnut Bread - Recipe

- This could be next year’s Christmas fruitcake.
BREAD INGREDIENTS
1 cup chopped dates
1 cup chopped dried figs
1 cup whiskey
1 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ground cloves
1/2 cup plain yogurt
1/2 cup butter, melted
2 eggs
1 cup sugar
1 cup walnut pieces
ICING INGREDIENTS
1/2 cp butter, room temp
6 oz (170g) cream cheese, room temp
2 cups icing sugar
3-4 tsp fig/date whiskey (from soaking fruit)
BREAD DIRECTIONS
1. Soak the dates and figs in whiskey overnight.
2. Drain whiskey and save for later use in icing.
3. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and cloves.
4. In a separate bowl, combine yogurt and melted butter. Whisk in eggs and sugar.
5. Mix wet ingredients into dry ingredients.
6. Mix in dates, figs, and walnuts.
7. Pour mixture into a papered loaf pan and bake at 325°F (170°C) for 1 hour and 15 minutes.
8. Give bread toothpick test. When fully cooked, let cool to room temp.
ICING DIRECTIONS
1. In a large bowl, cream butter and cream cheese.
2. With electric mixer, beat icing sugar (some at a time) into butter/cream cheese mix.
3. Beat in reserved fig/date whiskey, until icing is good spreading consistency.
4. Spread icing thickly on bread.
5. Serve remaining icing to be spread on bread by diners.

What's great is that you can change the fruits and nuts in the bread but the icing must be always kept! You're right Kevin, the icing isn't just for the top.😋👍
