Meditteranean Chicken Sheet Pan
Ingredients:
-Boneless Chicken thighs, cut into large chunks (or whole) *If I made this again I’d do it whole so that everythign is ready at the same time but I bought the chicken already cut up.
Chicken Marinade:
-1/2 tbsp olive oil
-3 tbsp plain unsweetened Greek yogurt
-the juice of 1 large lemon
-6 garlic cloves, minced
-1 tbsp oregano
-1 tbsp smoked paprika
-pinch of salt & pepper (to taste)
Method:
1. Dry chicken thighs
2. add them to a bowl with all of the marinade ingredients and mix well
3. Cover and place in fridge for at least one hour (to overnight- the longer the better!)
4. Take the chicken out 30 minutes before cooking to bring to room temperature
5. During that 30 minutes, cut up whatever veggies you like. I did zucchini, eggplant, bell peppers, and red onion.
6. Place the veggies in a big bowl, add some olive oil, salt, pepper and oregano and mix to evenly coat.
7. Place some parchment paper on a baking tray before laying the chicken and veggies on it. Don’t overcrowd the pan (I used 2 trays)
8. Bake at 400F (205C) for 37-40 minutes. If the chicken is cut up it will probably be ready early (~20 minutes?) so check on it and take it out before the veggies if you need to.
9. Place evrything on one pan and add the sauce (below)
For the sauce, blend the following ingredients:
-3/4 cup full fat Greek yogurt
-1 tbsp lemon juice
-1 small garlic clove
-salt & pepper
handful of fresh dill (I didn’t have any it’s ok if you omit)
Levi’s Pasta
Melt 1 tbsp of ghee or butter to a pan over medium heat. Add 1 minced garlic clove and fry until fragrant (~30 secs). Add the pasta, stir to coat the pasta evenly with the garlic butter. Pour in some chicken bone broth or chicken broth (enough to cover the pasta). Bring it to a boil then simmer until pasta is cooked (~15 minutes). Boil some water on the side to have it ready in case all of the liquid is gone and the pasta isn’t quite cooked. You can just add water until it’s cooked to your liking. Turn off heat, add some grated parmesan and serve.

My mom grew up going to Disney world and she said the first time she took my sister and I on a small world she cried the whole ride because she remembered riding it as a kid with her family 🥺

For me it was the opposite. I grew up with parents who didn't like going to any amusement parks at all! So taking my own children to Disney world was a dream come true for myself as well ❤

Tom, best thing about baking is it’s a learnable skill with fantastic payoff early on. It also is transferable to so many other cookery hobbies.I hope you have a fantastic and fulfilling time.

Lovely to see you guys again. Baking is such a great skill to learn. The problem is that freshly baked goods are very morish, you need to find willing test subjects otherwise you end up eating most of your produce (sometimes before it's cold!) and then you start piling on the pounds!

@@jmason1770 It wasn't the repetition of her words that seemed harsh so much as the implication behind them. I misunderstood bc of a lack of context- I don't follow the people I'm subbed to on YT on IG- so wouldn't know that Taylor had said those exact words at some point.

Ahhh it's been a while and so nice to see another vlog. Levi is soooo sweet omg! So nice to see you enjoying motherhood and I guess he is really growing up now that you can get back. I feel like my first 2.5 years with my little one was sooooo ON and now that she is 3.5..it's much easier and so much fun! Anyway, happy to see you back and enjoyed your vlog! ❤
Tay, 2 tips..
1. For next omelet, use those black non stick pans, mix some shredded cheddar with the mozzarella, put in cold non stick pan, cook on low medium heat, add egg as soon as you see the cheese has melted and fold while the egg is still a bit liquidy. Unbelievably delicious 👌🏼
2. I use a teaspoon as tongue scraper for 20 years now. The good part of it is that whenever I eat garlic, after scrubbing the tongue, I lick the spoon like a lollipop for a minute. All garlic taste and smell is gone 😊
