  • Baking your own loaf of bread can seem like such a daunting task, but its actually very simple! Give this recipe a shot and you won't want to go back to store bought bread!

    Yeasted Loaf
    Ingredients:
    500g All Purpose Flour
    360g Water (90F-95F)
    11g Fine Sea Salt
    2g Instant Dried Yeast
    NOTE
    This is a recipe from the cookbook Flour Water Salt Yeast by: Ken Forkish. I am giving you a brief recipe on the “Saturday Loaf”, he goes into much more detail with helpful guides in his book. If you are getting into bread, I highly recommend you get it!!!
    Method of Prep:
    Mix flour and water in a large 12 qt tub by hand, until just incorporated. Cover and allow to rest for 30 mins
    Sprinkle the salt and yeast evenly over the top of the dough. Using the fold and pincer method, fully enclose and disperse the salt and yeast evenly throughout the dough. Once the ingredients are fully incorporated and the dough has some tension to it, let it rest for 10 mins. Then fold the dough until it tightens up, then cover and allow to rise.
    After 10 mins, do another fold, and then after 50 mins do one last fold. Cover and allow the dough to bulk ferment for about 5 hrs or until it has tripled in size.
    Gently work the risen dough out of the tub and cut in two on a well floured work surface. Using the fold and pulling method, shape each piece into a medium-tight ball and place in a flour proofing basket. Cover and allow to proof for 1 - 1 ¼ hrs.
    In the meantime, Preheat a dutch oven in a 475F oven for 45mins with the lid on. Carefully place the proofed dough into the dutch oven with the seam side up (since we didn’t score the loaf, natural fissures from the seam will form giving a nice rustic look). Cover with the lid and bake on the middle rack of your oven for 30 mins, then uncovered 20 more mins.
    Allow the bread to cool for 20 mins and enjoy!
