The Basics Ep. 6 | How To Cook a Steak w/ Chimichurri
Steaks are a lot easier to cook than people think! With some simple techniques and a delicious sauce, you’ll be having a restaurant quality steak dinner at home!

Steak & Chimichurri
Ingredients:
STEAK:
½ - ¾ inch thick steaks
Salt to taste
------------------
CHIMICHURRI:
1 Bunch Parsley, finely chopped
4 small Scallions, Finely chopped
1 Clove Garlic, minced
½ tsp Red Pepper Flakes
1tsp Dried Oregano
¼ Cup Red Wine Vinegar
¾ Cup Olive Oil
1 tsp Kosher Salt
TT Black Pepper
NOTE:
Below are the steak temps. I recommend pulling your steak off the heat once it reaches 10-5 degrees before your desired doneness. This is because the steaks will continue to cook while they rest, so if you pull your steak at 135F it'll end up around 140 - 145F which is medium instead of medium rare.
Rare: 120-125°F
Medium rare: 130-135°F
Medium: 140-145°F
Medium well: 150-155°F
Well done: 160-165°F
Method of Prep:
Begin by patting your steaks dry with a paper napkin. Then apply a generous amount of salt all over the steak and let it sit on the counter for at least 10 minutes.
While that's resting, Combine the ingredients for the Chimichurri in a small bowl. Give it a taste, and see if you need to add more salt, vinegar, or oil.
Set that aside, and preheat a cast iron pan on high heat. If you don’t have a cast iron you can use a regular pan as well.
Pat dry the salted steaks, as the salt will have pulled out more moisture and then add 2 Tbsp of vegetable oil to the preheated pan and let it get very hot (Careful it is going to get a little smokey so open up some windows so your fire alarm doesn’t go off like mine did lol). Place the steak into the pan facing away from you so that no oil splatters onto you and let that cook for 2 minutes on each side.
Let the steaks rest for at least 5 - 10 minutes and then slice into them against the grain (Steaks like NY Strip or Porter House you don't have to worry about the grain, but steaks like skirt and flank make sure to identify the grain (which is the way the muscle fibers are going) and cut against it, instead of along it. This will make the steaks a lot more tender. Top with the chimichurri and enjoy!

      Yep, typically avocado oil has a bit of a "grassy" taste but I think it works well in vinaigrettes :)

    As soon as you finish letting the rice rest plate it in a bowl while it’s still steaming. Then crack a raw egg yolk into the bowl and mix it. The steam from the hot rice will start to cook the yolk. Shave a generous amount of lime rind on top and enjoy a dish like your in Japan 👌🏽 -Damian
