I make my sauce with well cooked butter beans, instead of cashew so it's lower in fat, but I add a little cashew butter. I love broccoli in mine with homemade chipotle grape tomato salsa. Such a comfort meal! 😋🤤 I love my kitchen scissors. I often use them to add green onion to my Asian dishes.

I was wondering about a substitute for those of us doing Reversal...thank you for the suggestion of butter beans! I will add this to the recipe in the book! I do wish the recipes had a P or an R for Prevention or Reversal on the recipes since they are not all inclusive for Reversal of Heart Disease.
This is a variation of SDA “cashew cheese!” I’ve been making this recipe for over 25 years 😊. If you want to make it Caldwell Esselstyn heart healthy just substitute potatoes and carrots for the cashews. It works great! You want it to be quite saucy before baking so that it isn’t dry.
Hot tip: boil the cashews for 15 minutes and it’s like soaking overnight. Gives it a more creamy texture. If you want nacho sauce use smoked anything lolol.
I made this today! I just had to try it. It is fantastic! I made it just like the recipe except I only had soy milk. It was great! I added the spinach and tomatoes. I did add the frozen corn and I used whole wheat elbows. Everyone should try it. I loved that you showed Ann pulling the tire at the end. She really is inspiring! You all are. Thank you for this wonderful, easy recipe!
Where Brian uses cashews, I use steamed cauliflower. It's a delicious, creamy, low-fat, nitric oxide rich dish. Using nuts seems to dilute Dr. Esselstyn's message but to each his own. I use scissors to mince greens and lettuce, as Brian does. To me, they taste a lot better in small bits rather than in big old chunks. Oh, yes, we Do want it swimming in sauce. I love that baking dish--so pretty! Peas are good in this dish, too. Thank you for an interesting video.
I agree this recipe is plant strong but not plant perfect so I use cannellini beans instead of the cashews to make a lower fat recipe and I eliminate the salt. Ann, are you no longer following a plant perfect diet?
What a fantastic dish! I love it with roasted broccoli on top! I use bean based pasta as I cannot eat wheat. And hot sauce on top is delicious! If you love it saucy there is zero guilt! My cash sauce uses roasted butternut squash instead of onion and red bell pepper. (I grow lots of organic butternut squash.)
Add the rest of the sauce, Brian. Peas also go well with this. I use jarred pimentos instead of roasted red peppers but essentially the same recipe. Blessings!

ALSO - I use Miso paste instead of lemon juice, it's not as sharp on the tongue and my daughter likes it better that way.

Been meaning to try this. OMG!!! It's delicious. I made the Roasted Cauliflower with added veggies yesterday and used some of this instead of the roasted red peppers. It was heaven!!
I'm not crazy about the red bell pepper in cheese sauce - I'll try the carrot and potato. Either way, that sure looked yummy. Somebody said mushrooms would be good too. I can't wait to try it. I think the tomatoes and spinach was a good switch.
@@kefirheals7383 i bake my red capsicums FIRST then peel off the charred skin. then holy dooley! when u throw them into the cheese sauce & blend, it adds a lovely sweet & slightly spicy element! which tastes NOTHING like raw capsicum.

Thank you Brian for this recipe. I made it tonight and served it on a bed of Lacinato Kale (thanks Ann :)) It was very good and I don't think you can have too much of the sauce. Unfortunately I'm the only one trying to eat WFPB and it can be a challenge sometimes making my own meals but I'm determined to get off the statin drug and reverse the T2. Your recipes help a lot with that so thanks.

Costco recently started selling macadamia nut butter(35 oz/12.99!)so as a "healthier" option than the cashews, you could then make Mac and Mac!!!(And they also sell Macadamia Milk which I feel is healthier than oat milk. We're not horses are we?;D)

This sauce will turn out better in a Vitamix or Blentec blender, way smoother and creamier then in the food possessor. Also, I would have used all the sauce with the noodles ( more is better, the ladies were right) because they will absorb more sauce while it bakes, not enough sauce will cause the whole thing being dry.

True except cashews are not a true nut. They are part of the fruit of the cashew tree.

Added Worcestershire sauce and powdered mustard to the sauce!
Unless you buy specifically vegan worcesestershire it has anchovies in it. I found that out by accident when I first went vegetarian
