Thank you so much for making the recipes from the book 'come to life'. To visually see this dish prepared inspired me to make it last night. I have had the book for awhile but reading the recipes sometimes overwhelmes me. After watching Brian make it with ease, I looked at my butternut squash and said "I can do this". Oh and Anne, I want to be like you when I grow up.
That's great, Dolores! I made this for some friends a year ago and they loved it. They couldn't believe the ricotta was made from tofu, they both had seconds. I love how Brian roasts and peels the butternut squash, very helpful as I have trouble doing this. Now I want to make this lasagna even though it's supposed to be 90 degrees today. @@doloreserin Enjoy! While I love the fresh roasted butternut squash, I've also used the frozen butternut squash (and roasted it) and it turned out good. It saved some time and heat in the kitchen.
I’m not plant based totally. Trying to slowly move over due to a diagnosis of pre diabetes and early stage diabetic retinopathy. Made this for dinner tonight. I was totally shocked at how enjoyable it was!! Crazy good!!
This was fantastic, award winning in our home as well as yours! I do place the noodles a bit differently as I rotate the direction of the noodles with each layer, it seems to give it strength and hold together when cutting and serving. We are already looking forwards to next month when we will make it again! Thank you so much for sharing!

This was amazing! I didn't have butternut squash, used one acorn squash and one kombucha squash,still delicious. Didn't have canned tomatoes, substitute a jar of organic tomato sauce and used the rest of the ingredients called for your marinar sauce, turned out absolutely delicious. Didn't have walnuts, used sliced almonds on the top along with the sliced fresh basil. This makes a large amount. Jane truly no big deal about not making it exactly like Brian's in the cookbook@ II think you could do all kinds of substitutions in this and it will still turned out amazing!!

Looks amazing, fyi, I add a layer of thinly sliced, roasted eggplant to the bottom layer and grated carrots to the veg/tofu mixture. The more veggies the better🥕

A singing Yu-Umm on this one! While I was out-of-town, I sent your lasagna link home to my husband. It was a hit at the family Thanksgiving. Then he made it for me when I returned home, with whole wheat lasagna noodles (turned out lighter in color than the brown rice version): we ate half and froze half (it freezes well but -- if reheating without overnight thawing in the fridge -- takes 2 hours/covered with foil shiny-side-down for 2 hours at 350F ) -- this is really great and we have added it to our short list of favorite & most satisfying dishes. The assembly tips were also very smart -- Thank you Jane & Ann & Go Brian!!

I wonder if you could use pumpkin filling as a replacement for the butternut squash? You can get it in a can (with no additives) and much easier than the butternut squash.

Made this recipe this weekend. I added slightly different veg ingredients to the pan using up what I already had at home, still used the butternut squash. Thank you for sharing, this turned out really well and was very tasty.. I also used your tomatoes sauce recipe.
Some of those floor toenails looked like they were getting tossed in the lasagna! Ahhh. I made this way back when the first book came out and it was overflowing! This looked more manageable. And delicious! I’m gonna need a bigger pan.

Made this lasagna yesterday. It is delicious. It took longer than I planned so I ate something else last night having it for diner tonight. I feel I needed to make more tomato sauce. The store had no Butternut Squash - just the noodles. They worked out fine - I microwaved the bag and then puréed with a hand mixer. Next time, I’ll use food processor. Plus, I’ll buy more than 2 bags (9 ounces each).

Jane I used the recipe from the book but assembled like Bryan. Adding the tofu stuff to the stuffing pan. Thank you so much. I feel like I can go plant strong now cuz I have your awesome recipes.❤
I made the Engine 2 lasagne according to the Beantown Kitchen vid here on YT and LOVED it!!! I take pureed tomatoes and add spices for my sauce. That lasagne has sweet potato instead of butternut? It's a little different, but still a taste explosion, a revelation, it fills yet does not weigh you down. A-may-zing!!!♥️

Wish I could eat tofu, but I'm following Dr. Esselstyn's cardio whole plant--NO fats (cashews, tofu). I'm so much better in a couple of months. walk down steep inclines and back without huffing and puffing.
Another way is to put some zuccini length strips into the dehydrator for a few hours to get the moisture out. Then I add one pasta noodle layer and the rest zuccini layers for a lower carb option.
Instead of foil, I cover lasagne with a cookie sheet. That way there’s no aluminum contamination nor waste for the landfill.

@Despina Christakis a cookie sheet is the metal pan used to bake cookies. She would turn it upside down to serve as a “lid” for the lasagna pan.

I made spinach tofu lasagna yesterday. It was so delicious that we ate the entire 8x12 dish of it. No regrets. Your lasagna looks delicious too!

I made this for Christmas and loved it! I did use mushrooms in place of the nuts as someone suggested and it worked nicely.

I used 2 bread pans before I had my lasagne dish. And I halved the recipe.

I soaked the top layer of whole wheat no boil noodles a few minutes in hot water before I assembled the lasagna because I don’t like dry noodles.

Sounds great…why do one pasta layer vs all zucchini? I’m heading to the store to make a zucchini version and want to buy a box of pasta I don’t “need”
