- It’s not potato leek soup! From my number 1 favorite Disney/Pixar animated movie of all time: Ratatouille! Remy really surprised Linguine when he fixed the soup! I’ve always wanted to try out what this soup might taste like using most of the ingredients and process shown in the movie. It was really quite good and I can see why it kick started Remy’s cooking career. I hope you enjoy this version of Remy’s soup!

Ingredients:
6 tbsp butter
1 onion, diced
2 leeks, chopped
4 garlic cloves, minced
28oz crushed tomatoes
1 tbsp sugar
5 cups chicken broth
1/3 cup parmesan cheese, cubed
1 tbsp thyme
1 tbsp herbs de Provence
4 bay leaves
1/4 tsp cayenne pepper
2 cups heavy cream
1/2 cup fresh parsley
Green onion for garnish

Thank you! I was always frustrated when I looked at other people’s attempts at this, but it never felt right to me cuz the soup we saw in the movie was red at the start, so I appreciate that you acknowledged it.

PLEASE PLEAS WASH YOUR LEEKS THERE IS DIRT IN THERE especially at the top
Yes good comment!! Leeks do have dirt or sand that should be cleaned off on the inner layers. I did not show any cleaning, and I used the bits that normally aren’t used from leeks just to be a bit more like the movie (when the whole leek bunch is tossed in), but yes please wash your leeks!
