really appreciate the talk at the end! like you said, not everyone has the time and opportunity to cook a lot from scratch. I'm a uni student and quite often too tired to cook completely from scratch, but I recognize I'm very lucky that our uni has vegan food almost every day during the school year so I don't have to cook lunch on the days I study at uni!

Woah! What you said about not always having time to cook and going for quick and easy solutions (e.g. throwing some veges with store bought sauce, noodles) is ME right now too! Validating! :) Something I've been doing lately when I really can't be bothered spending much time in the kitchen is boiling up noodles, using a packet of frozen Asian veg mix with sesame oil and frying that in a wok, frying up vegan chicken in a separate pan with seasoning and adding that to the veges, then adding hoisin sauce and the cooked noodles, then finishing with sesame seeds and chilli oil on top. Another version I've tried is "beef" with black bean sauce. Soo good! :D
