Miss Josey, you should go to Lantau Island, take the ferry from pier no. 6 in central. From there, you can take the bus to the big Buddha or the fishing village of Tai O. It will show you the nature side of hong kong, which is actually 70% of the territory. There are many beautiful natural beaches as well.
I'm very claustrophobic so Hong Kong freaks me out everywhere I go there....I don't like elevators or rooms without windows...I stayed in a hostel often and there were cots and no privacy...last time I went I got a nice hotel in a package deal with my plane ticket included train pass and some other perks.
