If you are working down the side of the work (such as adding a border around the edge) you will not have the V. Only in the top of the stitches. When working down the side for a border, I just try to insert my hook as consistently as possible. So in the similar spot in each stitch. If it's single crochet I do one for each single crochet height double crochet I do to so one toward the top of the double crochet stitch and one toward the bottom, etc. but yes you are not going to have a "V" to insert the hook into
For long single crochet or spike stitches, you would insert the hook into the same place on the stitch, but it would be a row or 2 below (depending by oh how long the spike stitch is) instead of the top of the previous row.
So my pattern asks me to yarn over, insert hook through last worked DC, skip to next chain space, insert hook through first dc but I just dont understand at all what they mean with "through last worked Dc/first DC? where do I put my hook?

So you are insert the hook into the top of the last DC, then pulling up a look (?assumed?), then inserting hook into the next (first) DC, then completing the stitch (?assumed?).

I can't seem to see where i have to insert the hook if i turn the work and start on the sides. They don't have the V structure.
