This recipe starts with a pre baked pie crust that is filled with fresh strawberries that are all coated with a shiny, tangy flavored, gelatinized raspberry sauce made with fresh raspberries. Absolutely delicious. You can serve this tart plain or it is even better with a dollop of softly whipped cream.

Sounds delicious the combination of chocolate and strawberries. I think that would work.

After I wash/rinse my fresh strawberries.
I put them in my salad spinner to remove as much water as possible. This allows the syrup/gelatin to adhere to the berries better.

This crust is crisp when it's first made. However, keep in mind that the filling will soften the crust if it's stored for any length of time. I'm sorry, but all the pie crust recipes I use are crisp when first made.

Made this yesterday for thanksgiving dinner. Everyone likes it, and everyone is amazed by how good it tastes. Even though my pie crust does not look as good as yours, but now I know what I can do better next time. And I didn't strain the seeds from raspberries, I like the texture of the seeds :) I couldn't resist the taste of the raspberry mixing when I making it, It tastes soooooo good. Thank you so much for the awesome recipe as always. Every time when I try your recipe I learned some new stuff, and they always turns out good. Can't wait to see your new recipe this week :)
Nommmm I'll be trying this is the future! : ) I haven't ever thought of using jello that way. Mmmm I think when I'll try this I'll using chocolate coating on bottom instead of apricots : )

I have made this into two 7" strawberry pie. They tasted great. I used cranberry and grape juice and strawberry jam to make jelly.

Do you think replacing the entire shortbread crust with a pure chocolate base would work? (using the crust tin, but lining it with melted chocolate, then refrigerating, then filling it with the cream and strawberries).

Whenever I see these beautiful tarts, I always wonder -- are the crusts Crunchy & hard, or soft? I like softer crusts... do you have a recipe for soft tart crusts?
This might sound silly, but could i use a tea spoon of water with a tea spoon of cornflour added to the raspberry syrup while its heating in place of gelatin? I remember using this in honey sauce for honey chicken and it thickened right up like jelly.

Hi, Could I run the rasberries through my juicer instead of pressing them against the strainer like you did? Or would the seeds have any affect on the taste?

If I was going to make this again, I would make the jelly from frozen strawberries instead. The raspberry flavor became very much the dominant flavor. Watch the crust very carefully while it's baking.
Hi Stephanie... Will this mixture stay thick once the strawberries have been in the mixture for a few hours? I recently tried making a “strawberry glaze” using cornstarch, it seemed nice and thick until I added the strawberries then within a couple hours the juices from the strawberries had thinned it out so much I was not able to use it the way I had intended. I have never tried the gelatin method and I’m hoping this will work for me. What I’m trying to achieve is a cake iced with stabilized whipped cream then borders piped around top and bottom and then the strawberry mixture on top of the cake with the border holding in the strawberries on the top. I really need the strawberries to stay thick so it doesn't drip down the sides of the cake. I really don’t want to use the glaze they sell in the stores full of all that artificial stuff. Any help will be greatly appreciated!
Dora Tomczak While cornstarch is good for thickening the juices when baking with fruit, it isn't the same thing as gelatin. For this tart the gelatin keeps the filling thick even after storing.

This recipe doesn't use freeze dried raspberries, just frozen raspberries. If you are asking if you could leave them out, I've never tried doing that so I don't know how that would work.

I do not see the point of removing the Raspberry seeds, you still have the Strawberry seeds. I just put the Raspberries in a blender with water, Gelatin, and Lime juice and some water. Bring to a a boil add corn starch and mix with the Strawberries.

You could blend the raspberry in the blender then strain it.. It would be much faster and easier
