I've always LOVED that Laura eats the food at the end of the tutorial. Most cooks/chefs/bakers don't bother which always makes me think 'okay, why aren't you eating it?' nothing major in the great scheme of things but it's one of the many things I love about her and why I've kept watching all these years

This is a different version of strawberry pie than I am used to. The strawberry pies I have had are more like a cherry pie, they have a top crust and you bake it in the oven, the filling is more like pie filling so it's very thick and rich. This version she made does look good though.
Laura i made your STRAWBERRY PIE i actually made 2 for EASTER and they were amazing everyone raved about them ! I mixed the filling with whipped cream & filled the pie shells.It was light & airy definitely a keep recipe.
That topping of mascarpone cheese and whipped cream nearly made me faint. You could put that on road kill and make it taste delicious. I would take the strawberries from the pot of jello mix, put them in a bowl and dump the topping on it and then run to a room with a door lock and proceed to destroy my health with glee.

I've found it's much easier to trim off the extra crust by just using kitchen shears instead of risking hitting your knife on the counter and damaging it during cutting
Ilove this pie.I have made it with Jello but I usually use my mother's recipe and cook the strawberries.they don't need any gelatin.Strawberries have lotsofpectin.And it also has a lot of shine.One of my daughters is a vegetarian and they don't use gelatin

I have a question. After everything is put together in the pie shell do you cool the pie in the fridge covered or uncovered. I'm figuring steam would form on the cover or if you didn't cover a skin would develop on the pie. What should I do?

Here in Brazil we do a little bit different. We do a nice pastry cream and fill it till half pie then we put the strawberries. It's wonderful

My mom has a recipe similar to this but it's for raspberry pie! And it has a shortbread type of crust that you just press into the pan. So yummy!
