What does they/them on a name tag mean? How to use they/them pronouns

I'm a customer talking to that person, so when do I actually call that person them/they if they are right in front of me. "Hi, they, how much do I owe you?", makes no sense..I just want to know your name

Well, you wouldn't say "they" in that sentence, it doesn't make any sense! Just leave it out
