  • ANGLO-INDIAN FISH VINDALOO
    Ingredients
    1 kg of any good fleshy fish cut into slices
    2 medium sized onions chopped
    2 teaspoons chillie powder (use the less spicy variety)
    2 teaspoons cumin powder
    1/2 teaspoon turmeric powder
    2 teaspoons ginger garlic paste
    2 tablespoons vinegar
    Salt to taste
    2 tomatoes pureed or chopped finely
    2 tablespoons oil
    Wash and clean the fish well
    Heat oil in a pan and add the onions and fry till golden brown.
    Add the ginger garlic paste and sauté for a while.
    Meanwhile, make a slurry or paste with the chillie powder, cumin powder, turmeric and vinegar.
    Add to the pan and fry for some time.
    Add the tomato purée or paste and fry gently.
    Add 2 cups of water and bring to boil.
    Drop in the slices of fish and mix gently.
    Cover and cook for 8 to 10 minutes.
    Turn off heat. Serve with steamed rice or bread
