ANGLO-INDIAN MUTTON PEPPER FRY
ANGLO-INDIAN MUTTON PEPPER FRY
Meat pepper Fry is a favourite and popular meat dish that is prepared very often in Anglo-Indian Homes. It could be prepared with either beef, mutton, lamb or pork. It is often an accompaniment with Pepper Water and Rice or Dol Curry (Dhal) and Rice. Goes well with Bread or dinner rolls or a Chapattis as well. It is also the perfect dish when recovering from the flu. This recipe is featured in my cookery book 'Anglo-Indian Cuisine - A legacy of Flavours from the Past'
Ingredients
½ kg Meat either Beef, Mutton or lamb (I used Mutton)
2 teaspoons fresh ground pepper or pepper powder
2 big onions sliced finely
1 tomato chopped
2 or 3 tablespoons oil
2 large potatoes, peeled and kept whole or cut into quarters
Salt to taste
Heat the Oil in a pan and sauté the onions for a few minutes till the onions turn light brown.
Add the meat and fry well
Add the pepper powder and mix well.
Fry for 5 minutes on low heat turning the meat well till the pieces get firm.
Add the chopped tomatoes and fry for some time
Add sufficient water, the potatoes and salt and cook on medium heat till done.
Keep simmering on low heat till all the water is absorbed and the meat and potatoes are brown.
Serve hot with bread or rice.
Alternatively, the same dish could be prepared in a pressure cooker. Turn off the heat after 15 minutes and let the pressure die down before opening the pressure cooker. Dry up any excess gravy before serving.

      Anglo-Indian dishes call for specific ingredients in moderate quantities. Adding ginger and garlic would detract from the taste and flavour that pepper brings to the meat

      No ginger and garlic is necessary. Adding ginger and garlic would detract from the flavour and taste that the pepper gives to the meat. We don’t add ginger and garlic in every dish unlike other Indian dishes

      Hi. I said about 20 to 30 minutes. It depends on the mutton. The dish needs to simmer till the meat is cooked which could take longer. The mutton I used was very tender. You could pressure cook the mutton if need be.

    Hello Ma'am, I am a beginner and hence could be the reason I have many questions for this easy recipe😊 I have watched 3 versions of this recipe on your channel (2 videos & 1 shorts). The measure of the main ingredients are the same even though the chicken and rice quantities are different. Video 1 (with marinated chicken): 1/2 kg chicken and 2 cups rice. Video 2 (with parboiled chicken): 1 kg chicken and 1/2 kg rice. Video 3 (with parboiled chicken): 1/2 kg chicken and 1 cup rice. 1. Just wanted your confirmation on the quantities remaining the same even though it's 1/2 kg or 1 kg chicken or rice? 2. Also, which one is tastier? The one with marinated chicken or parboiled chicken😊 3. The video where you've mentioned 1/2 kg rice - can you confirm how many cups instead please?       Hi Cheryl. No problem. I will clarify your doubts. As mentioned in the description, it’s a very rough Pulao which one could cook with the limited ingredients you have at your disposal. Hence the 3 versions with different options. You could stick to the video using marinated chicken as the process is faster. 1/2 kg rice is roughly 2.5 cups. Please note the ratio is 1 cup of rice to 2 cups of water if you want it well cooked or you could use 1: 1.5 if it’s grainy

      Hi Cheryl. Your grandma would have made a dish called Glassey which could be cooked with any meat with the addition of sweet mango chutney, or pineapple or honey or lots of tomatoes and sugar. This was to reduce the spice levels in the dish. I have a video of meat glassey.       I use sunflower oil . It has no flavour of its own unlike other oils so it doesn’t detract from the taste and flavours of a dish

    Not the way my parents made these! They only used beef mince, onions, chilli and garam masala. They were AI's too!

      Yes. I did mention that the usual filling is always mince meat but this was just another variation that I make when in a hurry.

    Looking for a recipe that captures the taste of the fish bake we used to often eat at home in Kolkata during my growing up years. Different from the British version. Please share a video if possible. Asking because your mutton stew is exactly how it was made in our home.

    A lovely recipe but the audio isnt clear. Instructions cant be heard because of the cooking noises, camera and mic placement is important
