I made this recipe with red & gold potatoes and olive oil. In addition to salt, pepper and garlic powder I added onion powder and dried oregano. I don't like ketchup so I ate mine with sour cream. Absolutely delicious!

I boiled mine for 10 minutes then toss them in olive oil and roasted them for an hour and they turned out super crispy!!! Even after 2 hours they were crispy 😀
These look so much better than French fries. Love the addition of adding the garlic cloves in their skin, as I imagine it prevents the garlic from burning. I'm definitely going to be roasting some potatoes this weekend.
OMG!! Thank you so much for posting this recipe. I just made a batch and it turned out so DELICIOUS!! Best I have ever had! I actually used russet potatoes with a mix of olive oil and sunflower oil. I also added purple onion, parsley and cilantro to the potatoes before baking, then waited until I pulled them out of the oven before salting. SO YUMMY!!!
Instead of flipping them half way through (I'm too lazy, lol), I spread parchment paper on the grill that comes with the toaster oven instead of using a baking sheet and use the 'toast' setting, so both the top and bottom heat elements are on simultaneously. That way they bake much faster (usually 2/3 of the time compared to using the 'bake' setting) and you don't need to flip them!

Great tips ! I do like using extra virgin olive oil though. You should be good with olive oil unless you go over 400. I usually roast my potatoes at 400 and they turn out Golden brown.
I actually don't add salt at all because ketchup is full of salt, and I usually set out 3-5 different condiments and most also have salt. No reason to just pile on salt flavor as the other flavors are amazing. I also have made these sprinkled with grated parmesan cheese, and have experiments with other seasonings. When I make potatoes like wedges I sometimes soak them in some warm water with salt because sometimes it make them a little soft on the inside when you cook em😋

God love all of you who have given a great review on this recipe. I cannot & I know that she will say it’s because I used russet potatoes, so have at it. I scrubbed my russets & dried them while my oven reached 425 then placed them on the baking sheet & baked for 20 minutes. At that 20 minute interval I then flipped them over & baked for an additional 12 minutes. I used avocado oil & garlic powder along with the still wrapped garlic cloves. These 1/2” or less sliced potatoes still were not cooked. the potatoes we hard as a rock & the garlic cloves did soften. So now it’s 42 minutes cooking on 425. I decided to dump them all into an oven proof bowl, added more oil & covered with foil. I’m hoping this cooks them. I know it’s going to be the type of potatoes fault so have at it you tubers.

Different strokes for different folks. I'll always add salt before baking, as I'll always add water, salt and pepper to eggs before scrambling.
