- This mushroom risotto Instant Pot recipe is wonderful and has changed our way of making risotto. Now you can enjoy a mushroom risotto in about twenty minutes using the Instant Pot and a great old world recipe imported from Italy by my husband.

I had it couple of days ago! Delicious and easy, I didn’t have arborio rice, so I used half sticky white rice (sushi rice) and half brown rice. I will pressure little longer next time, rice was little uncooked to me (I wanted soft texture). But loved it! Thank you! You are my favorite!

thank you for this recipie, I am new to this style of cooking. This risotto was amazing! I did my dishes while I waited for this to cook. I didn’t have red wine so I used Pinot Grigio instead, my husband thought the risotto was from a restaurant!

Looks like you are using an 8q IP, I have a 6q IP, should I adjust the ingredients as to not overflow my IP?

And Shauna thanks for answering my question of the day! 👏 I'm glad you're having fun with your new Instant Pot - and turning the valve to seal I'm pretty sure happens to each and every user at some point - it's like initiation 😂
just need a bit of clarification... you say natural release for 12 minutes, but then in the video you say you did a quick release? I new to this so just need a bit of guidance. Thank you :)
So a natural release can be all the way until the pressure is gone, or it can be for a set amount of time - for example, letting the cooker do its natural release for l0 or 12 minutes and then doing a quick release for the remaining pressure. Or sometimes a quick release is immediately after the pressure cooking - depends on the recipe.
