Thank you for the recipe to do a risotto in a pressure cooker. I usually make risotto in a regular way, but this way will speed up the process. The two crucial steps to make a great risotto, and you can do that also after the rice it's done on the pressure cooker is to add Parmigiano Reggiano cheese and butter. Then stir to make a really creamy risotto, enjoy and you will love it!

Dry sherry or dry white wine (not “oaky”) instead of vermouth , and a little grated parmigiana would make this dish sing . Love the peas addition . Easy and fresh addition to the dish . And loved that your risotto wasn’t over buttered . I think the dish is moderately rich , so I’d rather eat a second helping than being loaded with fat. Great tips !

I have the Arborio rice, just haven't had time to do the whole Risotto thing. I do have recipes using the Instant Pot (I love mine, by the way!!) just haven't , yet...Now I feel brave, and ready to try this yummy recipe. Thank you for a great video!!!

This looks wonderful. I haven't had any luck making rice dishes in the ipot. Everytime I add any thing it burns and is undercooked... I'll have to try this for sure!! You both look fantastic! love ya!
Hi Des -- I'm not sure why you are having the problem with your rice. If you are cooking brown rice, use 1 cup of water for each cup of rice. Rinse the rice. Add it to the IP with your water and give it 22 minutes on manual. Let it slow release. My rice turns out perfect every single time. White rice is another animal altogether. I don't cook it much but I think it only needs 4 minutes with slow release. Try that. Glad to see you.
I can do plain rice in the ipot all day long which turns out great. It's when I add other things to the rice I have trouble.... I'm going to try this exactly how you did and see what happens.

Jill 4 Today Well I made your risotto today and it is a lovely recipe. Did it with the white wine, 1 cup, amaze-balls; however I substitute the peas for broccoli. Not a great combo, the broccoli outweighs the mushroom flavor. #stilllearning will do again and use truffle oil this time.
The wine is a wonderful idea -- sure it was the bomb! I would also add some grated parm at the end. It is so quick and easy. I'll never make stove-top risotto again.
Looks a bit stiff to me but great recipe! I'd have added some butter and grated parmesan cheese but that might destroy the vegan nature of the recipe. I also despise peas but that is just me!
It can turn out a bit stiff but some broth can really loosen it up if that happens. There's all kinds of really good vegan parm on the market now. You might check into those.

I didn't forget the cheese. When I made the recipe we were plant based so cheese did not fit into the recipe. But you are absolutely right -- risotto without cheese is a crime! Thanks for watching and commenting.
Hi tried your lentil soup it was almost good I don’t think it was you I think it was the maker of the crockpot. Crockpot needs to get their instructions together before all of you guys come in with these wonderful recipes. So I wait for everybody to get their act together
I'm sorry you've been having problems with your slow cooker. I used an Instant Pot which may have made a difference. I'm not sure. But you can make this on the stove. Perhaps you'll feel like trying it again sometime in the future.
