    Mirin is not just a particular Japanese white wine, but it's much more like a common white wine all around the northeastern Asian region. It is written in Chinese character and spelt as Mirin or Mirim.

    Rather than the lemon juice, I always like to wash (not soak) my ikura with cold sake for a few seconds just before serving to brighten the roe and make them a little more turgid (they pop in your mouth) and have a cleaner, fresher taste to go with their slightly crisper texture.

    Great recipe! I especially like salmon roe on my gunkanmaki and with some small stripes of cucumber for the crunshiness. Great product to use after all.
    Keep up your great channel! I´d be thrilled to see more traditional sushi recipes :)

    My favourite way of eating salmon roe is: a little piece of fresh loaf (or a bread, but loaf tastes better) with a thin layer of butter on it and then a layer of roe on top of it. Bon Appetit.

    psa: yeah. we know. they're fish eggs: baby fish, basically. guess what?? chicken eggs are the same!! why should eating ikura seem like a very taboo thing while eating chicken eggs is an okay thing to do??

    Hello Mr. Devaux @HowToMakeSushi
    just wanted to let you know that I tried out an adaptation of this recipe
    You know the Seaweed pearls(looks like roe, made out of seaweed and vegan), you can get at Ikea?
    I Am soaking red seaweed pearls in a mixture of soy sauce, lime juice sesame oil and red thai curry
    and black seaweed pearls in soy sauce rice vinegar sesame oil and liquid smoke (i think its cherry wood-liquid smoke) so far the black ones taste like smoked salmon and the red ones like an asian spicy seafood-soup ^^
    I am throwing my birthday party at friday and decided to make a vegan asian-food themed party (half of my friends happens to be vegan so we all eat vegan that day)
    so besides sushi there will be other asian dishes like dumplings spring rolls etc
    I am also trying to replace fish with zuchini and aubergine slices that are currently soaking in a mixture of soy sauce wasabi sesame oil thai curry and vodka
    they will be dehydrated in the oven over night but ill soak them for 2 days before :)
    and I will definitively make a vegan version of the crispy tuna sushi you made (the fried one)
    probably will make a spread out of seaweed toasted sesame seeds and tahin (sesame paste)
    I will keep you updated how everything turned out ! exspecially the Seasoned "Roe" :D

      @@MakeSushi1 Heartly welcome, Davy! You're almost there, already. But pls feel free to take a look at my profile. It's mostly cooking channels. (Maybe you'll even like some of the music.) A little introduction: Yamyamfoods and Yasilicious are german spoken. (Xian is chinese and Yasmin half-malaysian). (I'm german.) Not a big deal, when you can watch what the're doing. Scott Rea is british. A certified butcher and fish-monger. Recently doing a lot with venison. Why not venison sushi? I think with your creativity, you could easily come up with some fantastic ideas.
      Like Sros fom Kambodia comes up with one new recipe, every day. (All cooked outside on one single firepit! Amazing!) And her channel is growing like crazy.
      A lot of inspiration I also take from "Flying the nest". Australian couple Jess and Steve always show the food they come across in different countries.
      Just for your inspiration. Think you'll hit the million, soon.

      @@MakeSushi1 An idea for a video: a tutorial on the ingredients you use. Like Xian did some on the favourite soy sauces. As a light soy sauce I prefer "Healthy boy brand", which is available in the US, too. Other brands, available in the US are also Lee Kum Kee or Yeo's. But I think a tutorial about the different types (brewing and so on) and availability would be much appreciated. Plus the effect, that could go a long way, when people say: "here's one video to explain the different types and brands. I bet, such a one would be shared by many.
      Another point: to replace things with??? For marinating my chicken wings, I usually use soy sauce with garlic and ginger. Problem#1: my stepdaughter doesn't like soy sauce. I then used black bean sauce. Even found it in a supermarket in Ponca City. Problem#2: a friend down in Duisburg is allergic to ginger. I would replace it with wasabi (so far I only got paste. But she promised to buy me some fresh in Duesseldorf) or siracha.
      Tutorials about such things could be interresting for many.

    hey once again it looks awesome but unfortunatly i am on the list for a liver transplant so is there something else i can use as a substitute for mirin?

      when creating/refining the recipe I tested several variations and some were without mirin, they were only marginally less tasty so if wine is something you cannot have then you could leave that component out.

      Glenn Kievit Rice vinegar is a good substitute, but since mirin is a sweetened I'd add a little bit of sugar to the vinegar. You probably won't need much sugar. Experiment - try getting a friend who is ok to drink alcohol to compare mirin and sweetened rice wine with different amounts of sugar till you get it right. And yes, good luck with your operation. :)

    Is there a recipe for making patties and frying them? I made this for someone else based on her recipe which was to add a little flour to the roe and some Zatarains' flour, then roll it in more flour and fry it. It almost fell apart in the frying pan. Shouldn't it also have egg to keep it together? She said no, but I don't think that's right - it won't hold well and it doesn't brown in the pan because the flour keeps getting soaked up by the roe.

    How can one be sure to avoid parasites when there is no heat involved?
    As far as I understand anisakis will survive fermentation.

      Some people think that stainless steel spoons ruin the flavor of fish eggs, mostly caviar.

    I purchased a quality canned salmon roe. Not bad. But it is salty and a little fishy. If I used this marinade technique, wold it improve flavor and texture? I thought then I would eat the salmon roe over rice in the bowl with fresh cucumber and wasabi.
