I catch steelhead, brown trout, and salmon from Lake Michigan. I usually use the roe for bait or pitch it. I am definitely trying this now! So awesome. I love the raw egg yolk with hot rice. Learned this from watching anime with my daughter.
I use hot water to separate the roe from the sacs (on salmon. I’ve never done steelhead). Make sure the roe sacs are cold, like just out of the fridge, and put in a big bowl. Pour almost boiling water on them and agitate gently with a wooden spoon at first, the water quickly cools enough for you to put your hands in (still pretty hot though) and you can use your fingers to nudge the eggs out of all the little folds. The membrane kinda shrinks up and breaks into small bits that you can pour off. It takes a couple rounds of hot water, and a whole lot of rounds of rinsing in cold water, but it works well. The roe will go totally opaque and you’ll be afraid you fucked up, but when you stir salt in and watch it get beautiful and translucent again it’s pretty magical. I’ve never tried the marinade you used (only ever salted and added a splash of sake or vodka), that looked delicious! Good tip about freezing beforehand too.
The water is pretty hot! Not boiling or anything, but as hot as your bare hands can stand to be submerged. That’s why it’s important for the eggs to be cold, I refrigerate them before doing this. I’ve never had them cook (though that’s what you always worry about when you see them going opaque, but that’s just them in any water. They get translucent again as you add salt)
I was skeptical of fresh hot rice with raw egg at first, but I ended up getting to enjoy it. Seeing you only choose to use the yolk makes it seem a lot more appetizing, my only problems I had with it was the egg white before. Your dish looked so good... Keep it up man
I worked in the fish department for a few year at Mitsuwa and my nostalgia on working on fish brought me to Taku's channel. Your comment just brought it full circle for me.
go to your local hardware store and buy gutter guard for eves. plastic and doesn't come in contact with anything metallic. tape it to a bow and grade it. we use this when we separate eggs from skeins for tying spawn for steelhead trips. Works for both salmon and steelhead roe.
Damn this video was really fun to watch! Idk why but when he said “Adam, I’m not going to give him a raw egg. He’s not that Japanese” I was ‘cracking’ up 🤣

Thanks for sharing that, I have never seen it before and I feel like I learned something cool! Very fun looking fishing lunch and you did all the work leading up so you could have that nice lunch on the water! Good friends good times!
Came here to learn about preparing roe, leaving with an absolutely delicious meal. Warm rice, soy sauce and a raw egg is a perfect simple meal. Love the marinade for the roe, adds such a nice flavor. Thanks so much for the info!
I’m Cuban and I grew up eating white rice with eggs but we always had them fried (runny yolk is a must though!). It’s a really underestimated dish though! Super simple and great for any meal. You can always add stuff to it too! Meats, veggies or whatever your taste buds desire (in this case fish eggs)
What a great video! Thank you! I’ve got an Alaska share. Find the plastic rain gutter covers that keep debris out if of rain getters. They are white plastic with round holes. It’s perfect for separating fish eggs from skeins! Easiest method ever! 50 bucks tip! Greg
I'm about as not Japanese as it gets and I tried the raw egg and rice about two years ago. It's one of my favorite comfort foods now. Give the dude a chance to try something amazing. LOL
I don’t fish but I LOVE watching your videos man ! Amazing cooking skills and GREAT content never know what you’re gonna teach us next ! Wishing great health and prosperity for you & jos !! HAPPY TAKU TUESDAY EVERYBODY ☺️
Taku, love the channel. Been a sub since around 20k. Here is a little tip to separate the eggs more efficiently, use a spoon and gently scrape them. They will come right off without popping!

Use a spoon against the membrane on a flat surface and this process will be much faster. We strip salmon eggs from skein for spawn bags.
