Definitely in my top 3, I’ve watched this video and made this at least 20 times in the past year. It is amazing, I love it! Here are some tips: 1. This is not the same without capers. They MUST be there, sorry. Sometimes it is hard to find ones in salt for some reason, but if you buy really high quality (tried with cheap ones, it was bad 😂) in vinegar and wash them it still tastes quite the same. Skipping them downgrades the dish drastically for me. 2. I tend to add a branch of fresh rosemary in the pan while cooking the salmon. I love the result, it it is my personal preference here 😁 Now I’m going to cook this amazing dish again 😁 Thank you Vincenzo!

I love this recipe, especially for summertime. 👌 I did tweak it a little bit though and butter poach the salmon, seasoned with just some salt, in the oven to an internal temp of 52c. That way the salmon comes out perfect every time. I mix it in last minute when everything else is ready and off of the stove. That way it doesnt overcook. And I love to add some extra veggies like spinach, cherry tomatoes, ovenroasted bellpeppers (skin removed)... All the good things that come with the summer.

I loved the combination of capers with chilly and moscarpone, with lemon and water from the paste, which brought the dish to life. I will test other times with different proteins. The way I do it is I don't cook the salmon at all. I basically do everything in this video but without salmon and the moment your ingredients are cooked together I turn off the heat and add shredded salmon. That way it's not cooked all the way through which makes it really moist and tender and generally awesome!

what did you add?
If you add chopped parseley at the beginning, they become dark and smelly gunk. It is a fresh herb. Better to add almost at the end. Cheers.
