We have cuisine too in the US. Spaghetti and meatballs - not like this, but like how you’d find it in old school delis and family restaurants, especially in New York and New Jersey. I actually like the product you produced more, but just as much as it’s authentic to Abruzzo, Italian-American spaghetti and meatballs is authentic to New Jersey. There’s nothing “wrong” about the often delicious food that Italian-Americans have been cooking in the United States for 150 years, even if yes, in the way that it developed historically it strayed from some of the foundations that make Italian cuisine so wonderful. But Italian-American spaghetti and meatballs is still is its own thing, and as authentic to many Americans as your nonna’s recipe is to you.
When you made the meatballs, I almost teared up, as you were using the same recipe and technique that my nonna used to make meatballs while she was still alive... Thank you for making this video Vincenzo

Only people who grew up surrounded by family and steeped in the culture of their country can understand what she meant. As an Italian (I lived in Italy throughout the entire decade of the 80s) I knew exactly what she meant - the dish she was cooking with all the aromas, brought back memories of her childhood, her growing years with her family and friends. That happens to me a lot! Learning a language can only do so much - want to get to really know a culture? You must learn their cuisine! By the way, I'm from Puglia, and my grandmother used to make timballo with egg pasta fettucine and tiny little meatballs that she put ME in charge of making!

I made this tonight and at nearly 50 years old, I realised that the reason I thought I didn't like most pasta dishes is because I've only ever had unauthentic versions in England! The sauce was to die for! My wife had an Italian Nona, and when she tasted this, the first words out of her mouth were 'it tastes just like my Nan's!' Hello Vincenzo! Tonight, I made this recipe for my parents and myself, and can I just say, WOW! I used peeled san marzano tomatoes from a can and made the passata myself 😊 The chitarra spaghetti is a revelation to us, so much better for sauce! Meatballs were time-consuming to make but well worth the effort! We all agreed this is a new weekly meal. Thank you 😊
This was the way they do it when I visited my family in Abruzzo. Not the big, giant meatballs that American eye-talians use, but small and bite sized. I love both, but the authentic version has more character to it.

The right way to do it. Great video Vincenzo. Usually when you order this the Italians will serve the meat balls on the side because of how large they are. And the spaghetti is usually considered a salad/hot salad.

If the meatballs are small you get more meatballs in the Sauce... The more the better. No more fight about the last meatballs... but making the tomato sauce is the better than buying the sauce. Cooked everything according to your recipe with slight changes - for meatballs I used turkey breast minced meat and added crushed half of zucchini into the meat together with parsley and parmigiano … veeery tasty! I have made this several times now and the mini meatballs are a revelation. No interest in wading into what is or isn't "authentic". I only care about what is good...and these are good. Really good. Only change I made was to poach the meatballs in the sauce. Just leave them alone and they set up nicely. You can also roll out your meatball mixture thin and cut off pieces like gnocchi. Saves a bit of time. Fantastic recipe especially if you have really nice homemade passata. The meatballs cook so quickly that you preserve the fresh tomato flavor.

Tiny meatballs. Genius. Never even considered it. The channel got me into making pasta dishes like I never did before. I've been wanting to try a good spaghetti and meatballs for a long time because I grew up on the typical American "wrong" way. Still, I think I may use our Cajun version of the mirepoix, what we call the Holy Trinity, and swap the carrots out for some bell pepper.
In Italy the American recipe of "spaghetti and meatballs" actually doesn't exist. The closest recipe is that in the video from Abruzzo Region where the meatballs are very little (local slang "pallottine", "little balls"). Actually they are not "spaghetti" but "square pasta", this one too have a name in Italian ("alla chitarra" meaning "by the guitar" in this case the guitar is an instrument to cut fresh pasta).
Half way through making it. Making it using fresh spaghetti cos we only had the thin dried stuff. Only had beef mince (not veal) so I chucked some beef sausage in the mix too.

In Sweden we would call those meatballs Frikadeller, since they are boiled, not fried. The size is good, pretty similar to proper Swedish meatballs. My grandma used to just take a bit of the mix and throw it in a frying pan, and make the meatballs round by moving the pan. I don't have that skill, nor the strength (she had 7 children, so it was a huge cast iron pan and lots of meatballs).
@@myishacherry7242 I own the pan now, but I don't seem to find a yardstick or a measuring tape. My guestimate would be 30 cm in diameter and a weight of around 2 kg. Not huge, perhaps, but she would cook and serve, cook and serve again and again until the family were full Then she would eat whatever was left, by the stove. It was a bit crazy back in the bad old times

Half way through making it. Making it using fresh spaghetti cos we only had the thin dried stuff. Only had beef mince (not veal) so I chucked some beef sausage in the mix too.

In Sweden we would call those meatballs Frikadeller, since they are boiled, not fried.
The size is good, pretty similar to proper Swedish meatballs.
My grandma used to just take a bit of the mix and throw it in a frying pan, and make the meatballs round by moving the pan. I don't have that skill, nor the strength (she had 7 children, so it was a huge cast iron pan and lots of meatballs).

@@myishacherry7242 I own the pan now, but I don't seem to find a yardstick or a measuring tape. My guestimate would be 30 cm in diameter and a weight of around 2 kg.
Not huge, perhaps, but she would cook and serve, cook and serve again and again until the family were full Then she would eat whatever was left, by the stove.
It was a bit crazy back in the bad old times

@@vincenzosplate I made it yesterday. I wasn't keen on making all those tiny meatballs but it turned out good. My teenagers assessment was 'You have to make this again, it was so much better than having to cut up and conserve pieces of huge meatballs'.
