Not deep fried in a copper pot with manteca, Coke, and OJ? Well, if I'm using a slow cooker or Instant Pot, I would add a couple of bay leaves, and some orange supremes (if you haven't done this before, try it). Instead of using olive oil to fry, I would use manteca, or render some of that excess pork fat to reduce waste. Fry or put it under the broiler till very crispy, and then add the sauce. I do agree carnitas are delicious, and not that hard to make if you aren't making it with a copper pot. Love to see more Mexican food recipes!
I noticed that you didn't use a coke cola in the recipe. I've done it with lard and only a slow simmer and using sour orange and lemon lime it's a combination of both. Great recipe and full of flavors and especially rice is tricky for some people and , I've done a lime green rice.

My friend works in a cafeteria in a factory and is always wanting ideas for the next items to put on the menu so I shared it to her Facebook page. They could always cook the meat the day before and make it up the next day. She said since the new boss took over he does everything by scratch well almost everything. Since he has taken over she said the head honchos have been coming in to eat. Im going to tell her to check out your channel because you have a lot of gluten free items
