My husband bought the wrong kind of pork. I searched for ways to cook my pork blade tonight, and this looked good. At first, I wasn't sure about the lard...it smells weird, but wait...after the citrus, then aromatics entered, I wanted to bottle the smell in the house! I used a Le Creuset pot, so I cooked it to light golden a bit longer than an hour at medium high. I didn't want to mess up, and rush that part. I wanted to get to the point when it was time for the aromatics. I scooped it onto a jelly roll pan with parchment paper, and my picky family were in love with it...not expecting how amazing it would taste. The citrus is so key. I shared with my Mexican-American neighbor who also loved it. Thank you. The instruction was so simple, and instructive without boring in between talking. Your maternal warmth makes it such a pleasant video to watch. ❤️👍

Made this recipe last night Rachel. They came out delicious. The whole family loved them. Thank you so much for sharing!!! I made a couple of mistakes, but overall they came out great. With all the spices that you put in them the end result is very tasty, compared to some recipes that only use salt, and garlic. I'm officially your biggest fan now. Rick

@@rachelcookswithlove Well, I think I over crowded the pot with meat and I had a hard time browning the meat, but at the end I think the coca cola helped them get a nice color. Also, I may have had the flame a little too high and at the end the bottom of the pot had some burned stuff on it. BUT, the carnitas were not burned at all, and the flavor was excellent. My son is a very picky eater, and he loved them. My wife loved them too. Thanks again for sharing!!!! God Bless!!! Rick
