    I've learned something authentic about mexican cuisine from you and that is most recipes tend to bring out the best flavor from the food itself. I really appreciate how you emphasize it most of the time!

    I use a can of crushed tomatoes instead if the puree and I put in a pinch of Cumin and a half tap of chilled powder . I like it a bit more spicy . I was happy to see your version so similar to my own . Thank you .

    This receipe is to a T perfect on measurements ratios of water/rice. I have tried many other youtubers receipes for Mexican rice and nothing came out better than this. My soon to be husband is Mexican and it was so frustrating not being able to get it down perfect like this grandmothers,but finally did thanks to u! Even when his grandmother showed me it was still hard because she dosent measure and dosent know how to measure,so when I go to do my own still a problem.The level of moistness is perfect not dry and not mushy. Thank u

    Most of the time tomato sauce has other spices and herbs although you can find it without. Tomato puree typically is just tomatoes and is thicker (with less water) than tomato sauce. You can substitute with either one but I usually use puree when making Spanish rice.

    I had to laugh when you placed the canned food on top the lid. I do that all the time. I used two bricks on top the lid of a water bath caner to produce the same effects of a pressure caner. It worked. All these little tidbits help so much especially to the beginner cook. You teach as well as demonstrate. Takes years to become an expert cook, it's an art form that can only be learned from those with much experience. Your channel does this. :o)

    • @RockinRobinCooks
      @RockinRobinCooks  10 років тому

      Tonithenightowl Thank you for your kind comments. That particular lid that I used in the video isn't a perfect fit but it works with the heavy weights on top! I'm glad you are enjoying the videos. :)

    Is Spanish Rice different than Mexican Rice? I make what I call a Mexican Rice. At one time I was toasting the rice as you did here. It seemed to take forever, so my patience or lack of got in the way and I just made rice the regular way and added my other ingredients, Bell, Onion, Garlic and diced tomatoes. Called it a day. I need to try again. Mine was good rice, but not quite the same as toasting the rice first. You seemed to toast them pretty fast. IIRC, mine took 20 minutes keeping a constant eye on it and stirring up. Maybe I did not use ebough oil.

      Minute rice is definitely different. You cannot make it the same way as using regular rice. Not saying it can't be done but you have to do things a bit differently and the taste is not as good.
