I like he only uses one knife to do everything and the skills he has he also doesn't sharpens his knife all the time like the guys in india , very nice one thing he can do is keep his blade from rust by putting a little cooking oil .

I've watched some videos of people cutting tuna. But i think i understand why Japan has the reputation for having the best tuna. They treat the tuna gently and work in a clean area and use the best and sharpest knives.
What i see from this guy is butchery. It may be ok to eat, but this is most definitely not tuna i would voluntarily eat.
Hope next time the camera is on the other side as I couldn't see the part when removing the guts etc.

you could have add the title to the cleanest fish cut in the market, I've never find this kind of cutting, so cleeean, the fins was cut, the skin also cleanly remove, and the meat sliced neatly. i definitely wouldn't mind to even pay more for the cutting skill, it'll ease me so much, just rince the fish and cook it, no need to worry about the fish cutting shape, and the fishy smell from unclean fish skin, loooovveee iittt
That is literally the worst way to remove tuna skin. Leaves all the sebaceous glands in the fish.... And that is what gives the bad smell. . See how he skinned that stomach meat, that's how the whole tuna should be skinned....otherwise it will taste very oily...
