- Expert chef Frank Proto from the Institute of Culinary Education and home cook Beth are swapping materials and hoping for the best! We equipped Beth with $75 worth of ingredients and Frank's recipe notebook before asking her to recreate his gourmet grilled cheese. To lend a helping hand, food scientist Rose dialed in for a tutorial teleconference slash pep talk. On the other side, Frank received $7 worth of supplies - usually more than enough to make a solid grilled cheese. But what tricks does he have up his sleeve for improvising his way up to gourmet? Where do I get this mug
In Spain we generally use 3 types of olive oil: The extra virgin olive oil to dress salads, the virgin one for sauces, creams and such, and lastly the "basic" olive oil is used to fry/deep fry stuff. Using the extra virgin for that would be a waste! That oil reaches a lower temperature point so your food could not get crispy, just mushy... Also, most of the essence of the oil would get killed by the high heat!

Never seen grilled sandwiches cooked in a frypan before until I went to the US. I love the "toastie" makers that are like sandwich presses but with grooves and ridges around the edges and middle that seal your sandwich on all sides and down the middle diagonally so you can divide it easily without losing your fillings.

It didn't even seem that hard though. Like I'd rather make that then buy some mozz that's been sitting on a shelf for however long!
It's a shame that these aren't set up so that the two can taste each others results.
Frank had the outside portion of the bread left over. He found a way to use it as a side snack, but I have another use for extra bits of bread (such as the heels of a loaf). I put it in an open baggie inside of a container of brown sugar. It keeps the brown sugar moist and loose, non-clumping. You can even do this after the brown sugar has become a solid block. 2-3 days will make it loose and easy to use again. Be sure not to leave the bread in for longer than that. It will have become rather desiccated and can start growing mold if left in longer. This bread trick also works with raisins, dried cranberries, and the like.
BTW, I have used ricotta in grilled cheese as well, and it was great. My best grilled cheese has ricotta (blended with some red pepper flakes and minced sun-dried tomato), provolone, and olive tapenade on Italian bread (cut on a diagonal to get a decent sized sandwich.) I call it my puttanesca grilled chesse, as I was thinking about penne puttanesca when I put this together.
