  • Professional chef Bill Clark and home cook Emily are swapping materials and hoping for the best! We set Emily up with an eye-popping $145 worth of ingredients from chef Bill’s kitchen along with his luxurious lobster mac and cheese recipe. To lend a helping hand, food scientist Rose dialed in to offer some of her trademark wisdom and encouragement. Over with Bill, a more reasonable $10 recipe from Emily was being accentuated on the fly in a quest to make it something gourmet. Grab a bottle of ketchup and tune in to find out who came out on top under these mixed up circumstances!

      Velveeta is super useful as a means of emulsifying hard cheeses. Tastes fine on its own, and not so flavorful that you can’t mix in other cheeses if you want.

      @@majoroldladyakamom6948 Not sure if trolling but if the taste is a problem, you can achieve the same texture/melting properties of velveeta by melting the cheese of your choosing down in some evaporated milk and then combining it with gelatin. It’ll handle exactly like the store-bought stuff, while tasting however you like it.

    This episode was so refreshing! Usually the chef talks down on the cheaper recipe, the chef wasn't even phased and Emily made me so proud this episode. I remember when she put ketchup on her steak now sis is a home cook. I cook almost everyday and I would be terrified to cook the lobster.

    Chef Bill is one of the few chefs who stuck to the spirit of the series and utilized the ingredients he was provided instead of just rummaging around in the cabinets to make a version closer to their swapped dish. Definitely one of the best in the series for that reason alone.

      Agreed. It's natural I think for there to be a bit of embellishment but sometimes I find they go over the top, whereas this episode like you say, kept true while still adding simple but effective chefy touches

    We need more episodes like this! No adding extra stuff on the pro chef's side, just changing the technique! This is a perfect episode, now we can do it at home since the "cheap" recipe is something almost all of us can afford.

      Yes! I was getting so sick of these pro chefs completely destroying the point of the challenge, like Palak in particular... she was the worst offender, when making the dosas. Then there was the girl that made her own gluten free cheescake base, like this isn’t about your personal diet, if you’re taking this challenge then take the challenge! If you’re going to ignore the whole point, then don’t be on the show.
      You can tell this guy is an actual pro because he can work with what he’s given instead of bending the rules to try looking like he’s making the dish fancy.

      @@Lily-qb1xv I think the point of the challenge is more using more common, easily available ingredients to make a quality dish, instead of the specialized, expensive ingredients they give to the home cook.
      It's more about the accessibility to the ingredients rather than the price of the ingredients. "More likely to find in the pantry or your local grocery store".

      I'm still very confused as to why the ketchup is included at all. I'm American, but never in my life have I ever seen a person eat mac & cheese with ketchup.

    I love that he’s versatile with both the cheaper and more expensive ingredients.. didn’t need to add anything expensive to the cheap ingredients to make it delicious, didn’t say anything negative about the ingredients, or lack of. I really like him and wanna see him on here again.

      I don't know why any side should ever be able to add or subtract anything. Is that not the whole challenge? Honestly, the bar is so low that everyone is happy he only added one ingredient and ignored how he just let the definition of croutons morph into large friend cheese-product sticks.

      Also, lack of added ingredients aside, I am sure both chefs cooking their original recipes would have been better compared to the other cooking it, which just shouldn't be the case with a pro chef cooking. Again, such a low bar it makes me sad.

    So my favorite ingredient for Mac and cheese is definitely the microwaveable macaroni pot from tescos I’ve found this works super well! 🥰💖

      Frank was cooking on his own channel and I forget what he was making but here was me in the comments making all these suggestions to make his recipe better not realizing he was an actual professional chef. I think I corrected something he said wrong as well. It was strange because you can tell he is a professional chef on "Epicurious" but "Proto cooks" he seemed nervous and unsure what to do in his few first videos.
      I actually like Frank in these videos because he will also not add anything and just use what is given, yet he will try to elevate the dish - just as Bill did here.

      In the other série home cook is indeed level 2.
