HEARTY Bubble & Squeak - 1940's style vegetarian dinner (GREAT fall weather dish!!)

  • What a way to start the comfort food season - this was so hearty and delicious, I cant believe I've never had it before. I mean, I think I have but in a different, more roasted form. But as a giant potato cake? YUM.
    This version is from the 1940s an thus due to meat rationing at the time, it is
    a veggie dish - however the dish stems all the way back to Jane Austen's time and it was filled with meat! But from what I have learned so far, in the 40's anything you had got put in in with it as long as there was cabbage and potatoes.
    I dare you to try it if you haven't, and if you are British... thank you for
    such a wonderful Autumn flavor!

    Isn't historical cookery fun? I've got dozens of old cookbooks in my own collection. My personal project is working out the recipe the boys used in Mark Twain's Tom Sawyer, when they were hiding on the island. I've found something pretty close to the description.

      I haven't in this dish but I ha e in others and it helps a bit, but I'm wondering if it is just the kind of carrots that are available to me.

    Legend has it it's called bubble and squeak because that's what it sounds like while cooking..

      I heard that... Although it cracked me up when I was looking at the reviews on the website I found this recipe on somebody had said their grandmother had told them that the bubble was from the sound your stomach makes after you eat it 😂

      Ugh that sucks...glad you keep coming back! I have had that happen to me on a few channels I follow but it hasn't happened for awhile...its such a pain. I read somewhere last year when it was happening to a lot of people that there was some glitch in UA-cam that was doing it. 😔 sorry its been doing that.

    I love Marmite. I do have it on toast but I have used it to flavour stews and vegetable soups. You don't need much of it as its strong stuff. I have also had it as a hot drink. A teaspoon of Marmite in a mug of boiled water.

      I definitely learned that it is a very strong flavor lol apparently you're not supposed to just eat a spoonful of it 😅 I will have to try the marmite tea… it kinda reminds me of when we were kids my mom would make us beef broth out of bullion to warm up after school… I'll give it a shot and let you know what I think!

    A little marmite in hot water acts as a bullion and can be used in nearly any recipe - gravy, roasts, stews.
