DELICIOUS Onion Shortcake - 1941 Breakfast Comfort Food - (SO GOOD!!)

  • I love a good breakfast and I love a good comfort food and this one just takes the cake...or as they have it "shortcake". Which is a TOTAL misnomer, because it is not shortcake at all. Its biscuits and eggs with onion and sour cream and holy diner breakfast Batman!!! This was amazing.
    Since this video was filmed I've made it 3 more times and added breakfast sausage and chives on top, a little hot sauce and it just completely hit the spot. I would HIGHLY recommend this recipe. I suppose you could
    use store-bought biscuit dough but really, I'd recommend using the homemade dough below.
    Also, a HUGE thank you for sticking with me while my schedule gets figured out. It seems that every time I end up with a break something else comes up. So thank you for your ongoing patience and I am making
    every effort to try to keep going here... this edit took me over a week when usually it takes me 3 hours. I'll get there. But in the mean time, here are the recipes:
    Courtney's Homemade Biscuits
    (for the shortcake recipe, just make the dough and stick it in the bottom of the pan. For cut out biscuits,
    see instructions below ingredients)
    4 cups white flour
    2 TBS baking powder
    1 tsp salt
    1 cup cold chopped butter
    2 cups cold milk
    Combine dry ingredients, smush butter in and work until the mixture is like sand. SLOWLY pour in milk until you
    have slightly sticky dough. Turn out on a floured surface and roll until 3/4 thick, no more than 1" thick.
    Place on baking sheet at 375F for about 15-20 minutes (golden brown) Remove from oven and douse with butter immediately.
    ONION SHORTCAKE
    (I did 325F for 40 min)
    2 c onion
    2 TBS water
    2TBS butter
    2 beaten eggs
    1.5 cups sour cream
    salt to taste
    biscuit dough (see above)
    Chop the onions finely. Cook with water and butter in a frying pan until clear. Place a thin layer of biscuit dough in a pan. Mix the eggs with
    the onions and salt and place on top of the dough. Cover with the sour cream. Bake slowly about 30 min.

    Glad you're back! Nothing like a little time partaking in a hobby to recuperate from a season of business. 😊 That recipe looks delicious. I might have to try that one for a special breakfast for my kids on the first day of school!

      It was really cathartic!! I cant wait to get back on a normal schedule. And really, this recipe is now a favorite. I've made it a couple of times since filming and have tried a couple variations with sausage and veggies and it just keeps getting better! Even the kids like it lol

    My gran taught me to cut onions under a stream of running water or underwater in a pan. It works!

    Sausage, chucks of ham or bacon. Any peppers, chives, finely minced celery, grated carrots, shredded cheese. Any, and all, of those would make that a brunch treat. Thank you for sharing this oldie but goodie!
    About the onions, when I worked in food prep decades ago I found that putting the peeled onions in a bowl of ice, with just a little water, for 30 - 60 minutes helped reduce the fumes when running the onions through the slicer.

      I've made this a couple times since filming with a few variations of fillings and can confirm that it just keeps getting better!!! And THANK YOU for that tip... it seems this years onion crop is way stronger than I remember last years... so between ice water and a pair of swim goggles I should be fine! :)

    I’m so happy to see you back. I was looking to see if i had missed a new video last wk. summer is always crazy. I hope you’re able to fix your water problems. My in laws had some issues and finally had to pump water from the bay in our home town. My sister also has an old one room school house she’s converted and she has had water issues as well. Here in BC we are water conservation because of the fires. I adore your videos and can’t wait for the ones♥🇨🇦

      Hey! Thanks for saying hi! We actually found out a few hours ago that we now have a completely dry well... so things are now set in motion to get a holding tank and water trucked in sometime soon, but my goodness... its been quite the frustrating journey to get to this point. Especially when I am trying to film and do dishes at the same time lol! I am glad your in-laws were able to find a solution...the waitlist for a new well up here is 2-3 years so I may just put the dang house up for sale soon and film out of a new kitchen lol. Or start doing depression era campfire cooking lol!

    Ive seen people wearing goggles that one uses for swimming to protect from the onion

      Oh my heck I don't know if my husband would ever let me live it down if he saw me cooking with swim goggles... but I may just try it! I don't know what it is about the onions this year, but they are terribly burny this year.

    That sounds delicious to me too. I think I'll try gluten free dough and just like the recipe, but then next time, add some sausage or mince. Yummo. What an unusual name for a savoury recipe though. Haha. Thank you for sharing lovely ❤

      It was so good - and if you have a GF dough recipe then I am certain it will taste just as good! But yes... this one is VERY good with sausage. I've made it a few more times since filming and can confirm it just keeps getting better with adding all the breakfast-y stuff lol. Although I think I may rename it.. Onion shortcake just doesnt have an appetizing ring.

    This recipe interests me, but I don't like sour cream. I think I may try to do it a little differently and try something else on top of the eggs and onion. Maybe cheddar cheese near the end of bake time would work... Your biscuit recipe looks great. Good to see you back!

      I wonder if you could use crème fraiche? I'm not sure what the flavor difference would be... but honestly I would totally be fine substituting it with gravy instead lol. And really, the biscuits are so so so so good. I am happy to be back.. I wish I could be back full time, hopefully soon. Thanks for saying hi!

    I think this would work with cottage cheese, or grated cheese.

      Oh I think you're right.. Cottage cheese would give a lovely flavor!

      I meant that the water would run dry so I'd have to wait for our whole system to fill back up again. Unfortunately we just found out a couple hours ago the well ended up completely dry... so that answered my question as to why I had to wait for so long to have the pressure tank replenished.
