  • I haven't come across another griddled breakfast snack that has such varied textures and flavours. These are something special.
    I have made crumpets on the channel before using milk and only yeast. this time I have used sour milk in combination with bicarbonate of soda.
    If you don't have sour milk then you can sub with buttermilk or normal milk. I you would like to make these plant based then try using almond milk or at a pinch, water works too.

    300g All purpose flour
    500g Sour milk / buttermilk
    10g Fresh yeast (5g active dried yeast)
    7g Salt

    Have just knocked out a batch and these sour Milk crumpets are very nice, Phil. Lovely flavour.
    The sour Milk was easy to make: pasteurised or unpasteurised milk (not UHT), add 1/20th part acid (I used white vinegar), stir, wait 5 minutes and watch the magic happen.

    They look perfect. Great recipe that I'll be trying. I managed to get some square rings just for a recipe like this. There's something magic about square crumpets :-)

      @@CulinaryExploration The ones I found are stainless steel and 10cm square. A bit large but when it comes to crumpets I can live with that :-)

    Brilliant recipe, Phil. My usual Christmas breakfast involves bacon, smokes and a lot of coffee 😄 but I think I'll change that this year

    Love it!!! I’ve done them with buttermilk before but I’ll have to try these. Perhaps a good name for these should include the first letter of sour, so how about Scrumpets?

    I have made similar yeast batter without the rings in frying pan, and using a waffle maker. Concur with you, the big holes are the best with honey and butter melted into it

    One of the biggest things I've missed since leaving the UK. You can make great eggy bread/french toast with them too.

      @Culinary Exploration im going to slap these on the cast iron boxing day morning. It's pancakes for the kids and these for the rest of us as a little treat.
      I've got a sourdough recipe with a poolish that is so convoluted for over Xmas. So nice one for the recipe. Its simple but I bet it tastes like a classic crumpet, like it should!

    Batter done. I'm gathering up all my courage to make another attempt at crumpets which I have always failed miserably in the past. Cast iron pan: check crumpet rings: nope, I'm going to try with another well oiled ring and if I succeed I will invest! Thanks for this recipe, I'll be sure to let you know how thins went...

      @@CulinaryExploration well, I hadn't seen your reply, but I tried with the ring, the first one was OK but a lot of sticking going on even with all the oil. So I did carry on by making huge crumpets (pan sized!) and they were fabulous. Couldn't take pictures 'cause the 5 starving kids here skoffed the lot in no time, but I can tell you that the English kid here today recognized the taste of crumpets with no difficulty at all! So I'm definitely keeping this recipe, and I'm ordering non-stick rings ASAP!! Thank you so very much, you make these recipes very easy and the result is always 100% amazing. Take care, Bluenn

    Similar to polish racuchy, we do like to add sour apples to the batter, served with icing sugar on top

      Sour apples? That sounds awesome. I lived in Krakow on and off over couple of years but I didn't see these. Is the sour apple in pieces or smooth in the batter?

      @@CulinaryExploration I think most popular method is in pieces, but I've also seen grated, definitely not smooth :)
      Burning your tongue on a piece of hot apple piece inside - taste of childhood :D

    I make pancake doughnuts which are softer than the crumpets and also enriched with egg. They are 100% better than any normal pancake.

    Arent these pikelets, or griddle cakes? They look perfect. I love how the butter fills the holes in the dough and sinks to the bottom --- so good!

      Where I come from, (NZ), pikelets are made with flour, baking powder, sugar, egg, milk. And maybe a bit of melted butter. They are cooked in a frying pan of on a griddle without rings. Cook one side til bubbles appear. Turn and cook the other side.

      Pikelets are very similar but are much less thick than crumpets. Griddle cakes are also flatter than crumpets but, more importantly don't contain yeast. I think they are Scottish? These are all things that are perfect eaten fresh from the toaster (or griddle, with griddle cakes) so the butter melts into them. Yummy! The better the butter the better they taste.

      I'm more confused now, lol. I thought a pikelet was a griddle cake. I think my confusion started with muffins. I grew up thinking of a muffin as the Amerian style muffin, so i always called English muffins crumpets and crumpets pikelets like my mum did. I still call anything with the holes pikelets, apart from Staffordshire oat cakes. What are Staffordshire oat cakes?

      There seem to be quite a few regional variations. Staffordshire Oat Cakes are an example. They are more like pancakes, made with fine oats, though looking like a very big pikelet. You could wrap a whole breakfast in a Staffordshire Oat Cake. Lovely, and why not be a bit American and cover everything in maple syrup :-)

    They look light and fluffy. I have never had the opportunity to try an English Crumpet. I am not a big fan of thick American pancakes so as long as there's are light I believe I would enjoy them..Blueberries would be amazing

    I’ve used puréed blueberries to make a non-problematic blueberry muffin that turned out fabulous. I’d love to see you try for a blue crumpet but it may need a bit of sweetener in the batter. Does this crumpet recipe have any yeasty flavor?

    I would love to see what you'd do with blueberries! I am blessed with two bushels of fresh berries every spring from a friend who has a blueberry farm. I have syrup, jam, jelly, canned berries and tons frozen to make rustic pies smothered in ice cream and quick breads, so it would be nice to have a fresh new recipe to try. I'm going to watch this video again and decide if I should buy rings to make short fat pancakes :) maybe I will just to have a new way to use blueberries LOL Thank you so much for sharing! Do you have or have access to a smoker? If so I'll share a recipe if you'd like of a to die for bacon that is pink salt free!

      Have you thought about fermenting some blueberries? You can make these crumpets without rings. You end up with a thinner pancake but they still have holes in the top! Yep, I can cold smoke on my BBQ

      @@CulinaryExploration Why no I'd not thought of fermenting. I wonder if I have a recipe and just got a new order in of FIDO jars with blue tops and that would be really pretty. To be honest I'm not a big fermenter and have only done beets and cabbage. I need to get out of the box don't I? LOL I do make faces on pancakes using blueberries LOL does that count for a few points? :)

    In some parts of the UK they're called pikelets. Delicious loaded with melted butter, topped with cheese or topped with a slice of beetroot then cheese then melted under the grill.

      Are Pikelets the name for them when they aren't cooked in rings in Andy? My daughter will love the idea of beetroot and cheese!

      @@CulinaryExploration as far as I am aware, no. They are exactly the same as crumpets just called pikelets instead.
      Try the cheese and beetroot. Toast the bottom then butter the top, add beetroot, cover with a good slice of cheese and toast the top under the grill until the cheese is melted to your preferred colour.
      I find the cheese is more sweet and tangy if you let it brown a bit on top. Hope she likes it. I'm sure she'll love it. 👍

    Is the sour milk, milk that you let go sour in your fridge? Interesting characteristic about milk is it contains serum proteins that inhibit Gluten formation. All the more reason to use it and not to scald it. That destroyed the enzymes.

    Do you really say, "you can sub this for butter milk"? I would say, "you can sub(stitute) butter milk for this" in the USA where I am. I noticed that the guy who does "Spain On A Fork" videos says things backwards the way you do and I corrected him. Maybe where you are from things are backwards because you're on the other side of the World?
